Junmai Ginjo🍶Summer only sake 😆. Sweet and thick 😳. It's like coarse 😅. When you take your time to sip it, it softens a bit and has a dry melon aftertaste. Softened by Aizu's specialty, squid and carrots. The final dish is a chilled shoyu sauce, which is unique to summer. But it is rather refreshing. The soup is delicious. @Digital Rural Tavern Kanmasu This is Gekiyumi from Nagurayama Brewery. The top aroma is slightly sweet. In the mouth, refreshing sweetness with a hint of yogurt-like acidity. This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending!
