Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

Sande Series (4) Yamagata Sake again 😂. This is Hana Hanyo from Koya Sake Brewery in Okura Village, Yamagata. We've had it in the past, and we also had "Silk" when we visited Shinjo ✨. As for the taste, I didn't really notice the aroma. The sweetness of the graininess spreads a bit on the palate. Overall, it was light, refreshing, and clean 😄. I felt that the sake alone was not enough, but I enjoyed the refreshing taste as a food sake.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.
