Hitoki Junmai
The aroma is not that strong. It has a fruity, pale yellowish flavor.
When you sip it, the fruity sweetness comes on at once. It has a pleasant light, fruity sweetness. It has the so-called "Mio-like" taste, but it is much more like a fruit wine, with a sweetness like dessert wine.
It is very delicious. You can drink it by itself.
Smells like pears.
Fruity carbonation. Apples, pears, strawberries, sweetness, acidity. Hard to believe it is made from rice. Delicious on the rocks.

Yamaguchi sake No. 2 at a banquet.
It is sweet with 5% alcohol.
It's good for toast. But I drank it in the middle of the party, so the timing was wrong😅 but it's easy to drink and tasty.
A gift.
It is a sparkling wine from Ichinozo with 5% alcohol by volume.
It is quite sweet, so I downed it in one sip.

It's a sparing drink, and when I first drank it, I thought it was harshly carbonated, quite calpis-like, and milky (not my personal favorite), but maybe not what the maker intended, but the second day after opening the bottle, it was strangely mellower and tastier than the first day....

Sparkling Sake! My favorite!
The glass is cute and my favorite too!
The second night was also ramen 🍜.
Shirakaba Sanso's miso is also delicious 😋.
Philando✨ found at a restaurant that Mr. Menshuoh had researched and found for us.
The owner was a total ****,
After listening to his explanation, I took this bottle that I was curious about and asked him, "Mr. XX, how much is this?" I was shocked at the price 😳.
We each drank one and left immediately 😫.
It's been a while since I've seen someone on their knees 🤣.
By the way, this Philando was a rare raw sake ✨.
While also juicy and sweet,
It tastes like an easy-drinking wine 😋.
Delicious but too expensive 🤣.

I bought this at Mori Sake Brewery on my last trip to Hirado!
The president of the company was in charge of the cash register that day😆.
He politely introduced us and told us that it tastes best chilled in a wine glass!
Sweet and sour from the aroma
Tastes like plum wine
Slightly sticky texture
A little sweet but not too sweet
Slightly rice bran-like, but you can sense the grains and nuts that only low-polished rice can provide
But still sweet 😃.
Sweet and delicious as a dessert wine
I had it with Nagasaki Fukusado sponge cake a few days ago
Champagne split today 🤣.
Half and half
Pour in a 1:1 ratio
Marriage of Philando and Champagne 😉.
Makes it less sweet.
Maybe just the right amount of sweet 🤔.

Think Finland, but Philando
Low-alcohol sake brewed by the Hiran-no-mori Sake Brewery
Drank at the inn we stayed at in Hirado
A super sweet dessert sake with low acidity!
Maybe the sweetest sake I've ever had.
I googled to find out how much sake it has!
It's -70 degrees ‼️😳
No wonder it's sweet!
The ladies in my house were raving about it✨
It's 500ml so it was a quick drink 🤣.
Assamblage2
Brilliant!
The lightest, with a strong minerality.
Green bamboo, chervil
Green melon flesh
Surprisingly gentle acidity.
Medium length on the palate?
Assamblage3
Flamboyant but a little strong?
Ripe apple, pear, quince
Slightly high acidity
Slightly long aftertaste
Assamblage4
More rice flavor than 3?
Fruit: yellow peach, pineapple?
Slightly greenish, with orangey melon-like pulp.
Acidity may be higher in Assamblage3.
The flavor of rice is well expressed in the flavor.

This sake is a blend of five different koji sake. It is said to have been blended from the beginning with the aim of making it better.
The taste changes depending on the temperature range, and it seems to be a sake that can be matched with quite a variety of things.
Stores where you can buy it are limited. Online shopping is available.

A delicious sake with a strong core. It is not blurred even when it is heated up, and it is good even in the latter half of 50 degrees C. It is also good cold. It is also delicious cold. It has a beautiful flavor and a strong character.

Sake we drank at a sushi restaurant.
Not as karakuchi as the label suggests, but a perfect sake for a meal 🤔.
Skunky, refreshing and piquant fruity!
The grapefruitiness is amazing!
Less sweet and dry than usual, so it's easy to drink and really tasty!
It is too easy to drink with no alu feeling at all!

It's light and gassy and you drink it like soda water...

At the end of April, when I went to have a drink with my wife at chuin-san, she suddenly saw chuin-san's sake cellar and said that she would give me back the space in my home refrigerator if I had something like this ❓🤣 We have a sake fridge at home, but it is not enough to hold all the sake we have 😅.
We have a sake fridge in our house, but it doesn't hold enough sake and the sake has invaded the chiller and vegetable compartment of the home fridge😅.
The sake cellar that I bought saying "of course" will arrive today, so I took a day off work to install it😇.
I was pleasantly replacing the sake cellar and the sake fridge alone, but... ❓What do you know, the sake cellar and the sake fridge alone can't hold all the sake, and some of it is back in the home fridge again😅.
This is not good😅
I bought a bottle of Kido's summer orange liqueur, which she loves, to put her in a good mood, but on the contrary, we are running out of space 🤣.
Anyway, we toasted with our family's standard toast, sansudo, as a celebration for the cellar, but she didn't have time to taste the delicious sansudo and avoided Mrs. Kido's gaze 🙇.
I have to be quiet for the time being😅
Recommend to drink this as ぬる燗. Thanks.

Kumitate" means "freshly brewed" and the toji tastes it and bottles it! I went to the brewery to get a sake seal! The young and energetic brothers were working hard. Othello, the signboard buchineko (cat), was also there.
Memorandum📝.
The most addictive sake in hiyaoroshi.
It has a bitter and smoky taste,
The maturity of the sake envelops you with a roundness from start to finish.
It is a sense of security from childhood, surrounded by babysitters.
It is an excellent sake that can be served cold or hot.
I drank two bottles in one season.

Started work today.
Fukushima Prefecture, Kawanuma-gun. Toyokuni Sake Brewing Co.
Toyokuni Tokubetsu Junmai Yamadanishiki Nama-Nagara Sake
Toyokuni is famous for its "Ippou-self" (Higashi) from Ishikawa County, and Toyokuni from Aizu, Kawanuma County, where we will drink this time.
I found out that there are two Toyokuni Shuzo Goshi companies with the same name.
The brewer here told me that they no longer have to indicate the year of production.
He told me that this brewery is identified by its own production number, NP-23C, where NP is not known, but 23 is the year 2023, and C is March, since the months go up alphabetically from A to January.
I bought a bottle of March released Nama sake in November 😁.
I drink it cold.
The color is light for an aged sake, just enough yellow to be discernible.
The aroma is sweet and mature, like burnt caramel. It also has a honey-like flavor.
The mouthfeel is surprisingly light, and the flavor has the extremes of sweetness and nuttiness that are typical of a matured wine.
After swallowing, the matured aroma lingering in the nose expands and the concentrated sweet and delicious taste increases. A bit of sourness at the end.
It has the juiciness and depth of a pure sake, and is rich, mellow, and delicious.
Ingredients: Rice (domestic), rice malt (domestic)
Polishing ratio:60% Flattened rice
Rice used: Yamadanishiki produced in Hyogo Prefecture
Alcohol Content:16% Alcoholic Beverage
Opened February 1, 2024
Purchased at Muramatsu Sake Sho, Shinbashi
It's raw, but it has an aged aroma: ❗️
It was made in 23.11, but was it aged in the store?
Complex flavor like mirin (sweet sake) ^ ^.
It's like a wine, but very unique w/o being a wine.
Very interesting🤣.
