Honkin👍‼️ At Hata Sake Shop in the first half of GW... I went to the cash register for a bottle of Hokian Okuni Yuki-Chu-Age and a bottle of Honkin... Then the owner smiled and said 😊... I've got it for you 😳 Put the honkin back in the fridge😅... 🐢Take it home 🤣 Very lucky ✌️‼️ So many people want to drink it but can't... Maru wrote about it in her zenkichi review... I wasn't expecting to be able to buy it this time... I drank Hitogochiki Junmai Ginjo on draft... So I bartered with Maru-san: ✌️ We went to visit a liquor store with a reason for delivery. Revisited Hata Sake Shop... I bought some more Honkin that I put back in the fridge the other day 😌... The taste... according to Maru-san... 　I can't imagine it from the bold label. 　Modern sake 　It's gradually sweet... 　Sourness quickly envelops you... 　It soaks into your body😊. 　Good ‼️ 　Will buy again‼️ Awesome👍‼️ It's a perfect 💯💮👏👏👏. Gentle sweetness and rice flavor with beautiful acidity. There is also a slight gassy feeling. Delicious and sweet, but I think the sweetness is a little weak, so I personally would like a little more sweetness. I think it tastes better if it is left outside for a little while rather than being chilled to a crisp.

Today we had Nozomu's active nigori 😀. The opening went without a hitch, and we were able to collect the supernatant and nigori for tasting 😀. I compared it with Hanaboe's Splash and Hanamup, which I opened yesterday, and it tasted even more like a lactic acid drink than Hanaboe's Splash, which is my favorite sake 😇. I still love nigori sake 😀.

Spring Sake & Nigorinpic1️⃣ 3️⃣ Today's sake is from Ibaraki Prefecture and is called Magami-san 😀. The owner of Hata Sake Shop, which I've been working with recently, recommended this sake to me as it is absolutely delicious 😇. The owner knows that I love Shinshu Kamerei and recommended it to me, so there is no doubt about it 😀. It is a muddy sake, but the supernatant was removed without incident 😇. The aroma is melon, but the supernatant after being brought to room temperature was quite dry and robust tasting 🤣. However, after mixing the lees and making muddy sake, it tastes more like melon 😇. But because of the dryness of the supernatant, it was a great melon sake with a sharp taste that did not interfere with the meal 😇.

I thought it was time to start a spring sake comparison, but before I do that, I'm going to open a bottle of sake that I prepared for warming up😇. I opened a bottle of Mutsu Hachisen's ISARIBI 😀. My image of heated sake is one that goes well with fish dishes, but today I'm going to start with a cold sake 😇. It's a special junmai, but I could smell the same ginjo aroma as a ginjo-shu, but it's not as dry as it should be 😀. It was a delicious sake that didn't interfere with the food 😀. Of course, the dish I paired it with was sashimi, which was delicious 😀. Tomorrow will be the last time I warm up sake for the year 🤣.

December is 　Hitogokochi Junmai...exquisite balance In January 　Miyamanishiki...Elegant sweetness 　Hitogochi Jungin...light and smooth In February 　Yamae-Nishiki...pure and mellow And this month 　Yamada Nishiki This one is also very tasty 🤤. It has a mild umami like Yamadanishiki and a light acidity with a hint of gas. ☺️ And above all, the lingering aftertaste with a hint of bitterness The lingering aftertaste is profound😊. Then the soft umami spreads again... Yamae Nishiki is the image of Mikotsuru, isn't it? Less sweet than Mikotsuru. The gentle feeling is very pleasing.

The hundred spring is the first time 🍶. Hyakushun, brewed by Kosaka Sake Brewery, is a wish that the drinker will enjoy sake and be in good health for a hundred springs. The brewery is dedicated to producing fresh sake with a slight gassy taste by direct pumping. Fraise" is French for "strawberry. The sake has a sake strength of -18 and an acidity of 3.0, and the alcohol content is slightly light at 14%. The appearance is crystal with a slight yellow tint. The ginjo aroma is soft, with a hint of berry sweetness and sourness with a strong acidity. On the first day, the unique powdery lime-like nuance was bothersome, but by the second day of opening the bottle, it was almost unnoticeable, so the following is a review from the second day onward. The stimulation of fine gassiness in a smooth spread. The first sip has a white malted rice-like acidity. After that, it starts with a clear sweetness, followed by a cute, berry-like acidity that spreads softly on the palate. The fruity sweetness rides on the tongue, and the acidity flows down the back of the throat and finishes. The lingering slight stimulation of the acidity gives it a nice sharpness. From the specs, the taste is surprisingly clear and clean, with a moderate sweetness and a fruity, firm acidity that brings it all together 🍓.

I started sakéwa last fall and after reading your posts, there were 3 brands that I really wanted to drink but never saw 😅. Saikyo, Yoshida Kurau and Shinshu Kamerei 😀. I met a lot of people at Sake-no-wa, and this time Rafa papa told me about the store and I managed to get this Shinshu Kamerei today 😀. I usually don't drink it right after I buy it, but not this time 🤣. I immediately took it home and opened the bottle 😀. It was delicious 😀 A little tingling and chili when you put it on your tongue 😀. But when it goes down your throat, it's clean and crisp 😀. It was bliss 😀. The Hana Yuu and Kido Yumachi we compared were also delicious, but the Shinshu Kamerei was the best for me today because I wanted to drink it 😀. But the second day's Kido Oumachi also opened up nicely and was definitely better than yesterday's cold sake 😀. Thank you very much, Rafa papa 🙇.

I know you all were worried about me, but my wife, Kaorin, was safely identified as Corona today😅. Now we will be separated at home until the 24th 🤣. I wish I could do something for her, but I work in a medical facility where contact is strictly forbidden 😅. So the question that arose was what to eat tonight😅. After much thinking, I decided to make oden today...I can make it and feed it to her too 😀. The next question was what kind of alcohol should I drink today😅😅. So we set out to find some heated sake to go with the oden 😀. Which restaurant to go to... then I remembered the restaurant that Rafa papa told me about the other day 😀 This was my first visit to this restaurant. It was my first visit to this store and I told the owner that since I was going to drink Oden today, I wanted a sake that would taste good at around 40 degrees Celsius and he recommended this sake 😀. I compared the sake that was boiled in hot water to 40 degrees and the sake that was left chilled, and it was really good heated sake 😀. It tastes a bit hard in the chilled state, but when I heated it up to 40 degrees, the aroma and taste opened up at once 😀. I brought Kaorin a bottle of Otters' amazake as a souvenir 😀.

The first bottle is Shinshu Kamerei The second one is Kawanakajima Genmai 🌬️🌳🔥🌋 Both have an elegant sweetness that spreads at once. Kamerei has a mild acidity that creeps up 🥷🏻... Beautiful sharpness and easy to drink😋😋. Both are very delicious 🤤. My favorite is Shinshu Kamerei 🐢🐢🐢🐢🐢.
