It's been a while 😀
I'm back at Sake-no-Wawa on July 28th without any problems 😇.
Since I started Sake-no-wa, I realized my lack of knowledge about Sake and decided to study 😅.
I decided to get either a sake taster or a sake diploma, and since I have a sake certificate, I decided not to do the sake taster which is in the same family, but to try the sake diploma 😇.
I always read and write comments on sakewa during my commute to work, but I held off for a month and used that time to study and today I passed the first exam without a hitch😇.
The only way to pass the second test is to drink, so I guess I can drink a lot without worrying 🤣.
So I opened a bottle of Ginkame today to celebrate 🎊
If you want to become a sake diploma, you have to write a proper comment on the taste, but anyway, Gin🐢 is very tasty😇.
I had opened a bottle of Sairai Buspar, which was opened earlier, and Akirika's Aragoshi Nama Sake and Chushingura 47, which I bought at the brewery, and they were all delicious, but Gin🐢 was exceptional!

I am in the middle of Kochi sake...
I was able to purchase it on the first day of GW with various connections.
I won't go into details, but thank you Rafa for connecting us 🙇.
It's commonly known as "Kinkame.
It is gassy, sweet and juicy. Citrus and apple type.
The second half is a little bitter, but the aftertaste is very fruity.
Delicious but too luxurious, I would like to drink an everyday 🐢. I can't afford it though 🙄.
I can never drink Hexagon on this 😭

Today I am Beian Daikoku Anniversary😇.
This sake is a project with Hata Sake Shop and the sake brewery 😀.
I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣.
Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇.
I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇.
It was delicious 😀.

Craft saké due to liquor tax law
A portion of the moromi is fermented with glutinous rice germinated with brown rice malt
is added to fermentation
When poured into a cup, it is very smooth and clean.
It has a very clean and refreshing taste 😋.
Full sweetness and pleasant umami of rice
Delicate and fresh acidity 🤤.
Yuki-san is very good at getting the owner on board.
The sake tasting kept coming out one after another 🤣.

Today's sake is from Ibaraki Prefecture and is called Magami-san 😀.
The owner of Hata Sake Shop, which I've been working with recently, recommended this sake to me as it is absolutely delicious 😇.
The owner knows that I love Shinshu Kamerei and recommended it to me, so there is no doubt about it 😀.
It is a muddy sake, but the supernatant was removed without incident 😇.
The aroma is melon, but the supernatant after being brought to room temperature was quite dry and robust tasting 🤣.
However, after mixing the lees and making muddy sake, it tastes more like melon 😇.
But because of the dryness of the supernatant, it was a great melon sake with a sharp taste that did not interfere with the meal 😇.

Today's sake is a nigori from Honkin-san in Nagano 😀.
Actually, after reading Rafa papa's post on Sake no Wa, I was attracted by the taste and the label, so I went to the same store to buy some 😀.
It was a delicious sake that matched the sky blue color of the label 😀.
