Spring Sake & Nigorinpic1️⃣ 3️⃣ Today's sake is from Ibaraki Prefecture and is called Magami-san 😀. The owner of Hata Sake Shop, which I've been working with recently, recommended this sake to me as it is absolutely delicious 😇. The owner knows that I love Shinshu Kamerei and recommended it to me, so there is no doubt about it 😀. It is a muddy sake, but the supernatant was removed without incident 😇. The aroma is melon, but the supernatant after being brought to room temperature was quite dry and robust tasting 🤣. However, after mixing the lees and making muddy sake, it tastes more like melon 😇. But because of the dryness of the supernatant, it was a great melon sake with a sharp taste that did not interfere with the meal 😇.

I thought it was time to start a spring sake comparison, but before I do that, I'm going to open a bottle of sake that I prepared for warming up😇. I opened a bottle of Mutsu Hachisen's ISARIBI 😀. My image of heated sake is one that goes well with fish dishes, but today I'm going to start with a cold sake 😇. It's a special junmai, but I could smell the same ginjo aroma as a ginjo-shu, but it's not as dry as it should be 😀. It was a delicious sake that didn't interfere with the food 😀. Of course, the dish I paired it with was sashimi, which was delicious 😀. Tomorrow will be the last time I warm up sake for the year 🤣.

Seikyu Sama Junmai Ginjo Yamadanishiki Nama-Nishiki Nama-narashu Nakadori This is my first time to drink left horse 😊. Left horse has the meaning of prosperous business and good fortune. It is a good omen...👍‼️ On the day of opening the bottle... Transparency with little clutter typical of Yamada-Nishiki ✨. Sourness with a hint of sweetness like density The acidity with a hint of sweetness like density ✨ spreads in the mouth... Very beautiful and easy to drink... But a little bit lacking 😅... However, the next day, the flavor takes over The sweetness and umami spread out refreshingly and round 😋. It became very tasty 🤤. I would like to drink it again 😌.

Shinshu Kamerei Junmai Ginjo Yamadanishiki Unfiltered Nama-shu This is the 5th bottle 🐢 since last December... 😋. December is 　Hitogokochi Junmai...exquisite balance In January 　Miyamanishiki...Elegant sweetness 　Hitogochi Jungin...light and smooth In February 　Yamae-Nishiki...pure and mellow And this month 　Yamada Nishiki This one is also very tasty 🤤. It has a mild umami like Yamadanishiki and a light acidity with a hint of gas. ☺️ And above all, the lingering aftertaste with a hint of bitterness The lingering aftertaste is profound😊. Shinshu Kamerei Yamae Nishiki Junmai Ginjo Unfiltered Nama-shu First impression... The sake poured into the sake cup was so beautiful 🥰. It looked kinda shiny✨ I've never experienced anything like this before... 🙄. The taste is as pure as it looks 😌. Mellow, juicy, sweet, umami... Elegant and beautiful acidity... Then the soft umami spreads again... Yamae Nishiki is the image of Mikotsuru, isn't it? Less sweet than Mikotsuru. The gentle feeling is very pleasing.

Nigorinpic emergency entry 😀 Today's sake is a nigori from Honkin-san in Nagano 😀. Actually, after reading Rafa papa's post on Sake no Wa, I was attracted by the taste and the label, so I went to the same store to buy some 😀. It was a delicious sake that matched the sky blue color of the label 😀. For more detailed comments, please read Rafa papa's post 😀. By the way, the comments on sake-no-wa are really helpful...even for a sake newbie like me, thanks to your information, I never miss out on trying a new sake 😀.

The hundred spring is the first time 🍶. Hyakushun, brewed by Kosaka Sake Brewery, is a wish that the drinker will enjoy sake and be in good health for a hundred springs. The brewery is dedicated to producing fresh sake with a slight gassy taste by direct pumping. Fraise" is French for "strawberry. The sake has a sake strength of -18 and an acidity of 3.0, and the alcohol content is slightly light at 14%. The appearance is crystal with a slight yellow tint. The ginjo aroma is soft, with a hint of berry sweetness and sourness with a strong acidity. On the first day, the unique powdery lime-like nuance was bothersome, but by the second day of opening the bottle, it was almost unnoticeable, so the following is a review from the second day onward. The stimulation of fine gassiness in a smooth spread. The first sip has a white malted rice-like acidity. After that, it starts with a clear sweetness, followed by a cute, berry-like acidity that spreads softly on the palate. The fruity sweetness rides on the tongue, and the acidity flows down the back of the throat and finishes. The lingering slight stimulation of the acidity gives it a nice sharpness. From the specs, the taste is surprisingly clear and clean, with a moderate sweetness and a fruity, firm acidity that brings it all together 🍓.

I started sakéwa last fall and after reading your posts, there were 3 brands that I really wanted to drink but never saw 😅. Saikyo, Yoshida Kurau and Shinshu Kamerei 😀. I met a lot of people at Sake-no-wa, and this time Rafa papa told me about the store and I managed to get this Shinshu Kamerei today 😀. I usually don't drink it right after I buy it, but not this time 🤣. I immediately took it home and opened the bottle 😀. It was delicious 😀 A little tingling and chili when you put it on your tongue 😀. But when it goes down your throat, it's clean and crisp 😀. It was bliss 😀. The Hana Yuu and Kido Yumachi we compared were also delicious, but the Shinshu Kamerei was the best for me today because I wanted to drink it 😀. But the second day's Kido Oumachi also opened up nicely and was definitely better than yesterday's cold sake 😀. Thank you very much, Rafa papa 🙇.

I know you all were worried about me, but my wife, Kaorin, was safely identified as Corona today😅. Now we will be separated at home until the 24th 🤣. I wish I could do something for her, but I work in a medical facility where contact is strictly forbidden 😅. So the question that arose was what to eat tonight😅. After much thinking, I decided to make oden today...I can make it and feed it to her too 😀. The next question was what kind of alcohol should I drink today😅😅. So we set out to find some heated sake to go with the oden 😀. Which restaurant to go to... then I remembered the restaurant that Rafa papa told me about the other day 😀 This was my first visit to this restaurant. It was my first visit to this store and I told the owner that since I was going to drink Oden today, I wanted a sake that would taste good at around 40 degrees Celsius and he recommended this sake 😀. I compared the sake that was boiled in hot water to 40 degrees and the sake that was left chilled, and it was really good heated sake 😀. It tastes a bit hard in the chilled state, but when I heated it up to 40 degrees, the aroma and taste opened up at once 😀. I brought Kaorin a bottle of Otters' amazake as a souvenir 😀.

Jinya Special Junmai Hatsu Shibori Hon Nama Jikin Kimoto Comparison... Just as I was about to start, a couple of friends invited me to a New Year's party... A friend and his wife invited us to a New Year's party... 😁. Wife likes Sake but she is not a sake drinker... Husband doesn't care much about sake... I think it's too good for them 🤔. The sake comparison was ended early 🤣. So I opened a new bottle of Jinya 😌. I bought it in December when I patrolled Hata Sake Shop. I got a bottle of Shinshu Kamerei Miyamanishiki with it ✌. Freshness that is typical of new sake with a light cloudiness. The sweetness and umami of rice that only Tokujun can provide. and the freshness of the petit fizz. It is a very delicious sake 😋. Encountering unknown sake on a patrol... It's also fun... 😌 The wife was dizzy from too much drinking 😵‍💫 We returned home early 😁.

Shinshu Kamerei Hitogokochi Junmai-shu Unfiltered Nama-shu The result of diligent patrolling 🚓🤣. I visit the store regularly to buy sake... I asked when Shinshu Kamerei would be in stock 👂. I'm going to go to the last week of November and see if it's around next week... Check the brewery's installation to confirm the shipment... When I went to the store with full anticipation... The owner smiled at me 😊. I didn't say anything. He brought out a bottle from the back of the fridge He brought out a bottle from the back of the fridge ✌️ This kind of thing makes me so happy 🤣. Fusashimaya Junmai Super Dry, Ogirigarumi I drank a lot of sweet and tasty sake recently. I want something refreshing... I found this in the fridge at the store 👀 Boshimaya's "super" dry 🌶️ Sharp and crisp acidity! As the name suggests, it's "super" dry. but with a full-bodied rice flavor and a hint of sweetness Very easy to drink... 😋. Just as I imagined 👍🤣🤣‼️

Hyakushun 10TEN R4BY Junmai Ginjo-shu Unfiltered Nama-shu Nao Kumi This is very delicious... 🤣👍👍‼️ Juicy sweet and tasty... With a firm acidity... Very rich taste 😆. It's 17 degrees and rough... but it's not too rough. rounded and cohesive 😌. No 1sho bottles this week, all 4 gou bottles! I feel guilty about having more empty bottles every day 😅 I have to write a review every day... 😅 I still prefer to have a bottle 😁.

There were several kinds, I somehow wanted to drink some raw sake... The same as Ecru which I had the other day and it was delicious! Selected Akita Sake Komachi ✌️ It's only available in April 2023 😅. This is delicious! The perfect balance of strong acidity and umami that is typical of a sake yeast yeast yeast yeast yeast yeast yeast yeast yeast yeast yeast Great balance of strong acidity and umami 👍‼️ It's light, yet mellow and crisp. It's my favorite taste 🥰. It has a very lively taste 😌. Nozomu is a definite sake! It was Tochigi love from Osaka 💓🤣‼️
