Harujion Unfiltered Nama Sake, a new release from Koei Kiku, was sold out yesterday, but I was able to buy a bottle for today. I was told that the bottle must be well chilled when opened or there is a risk of the lid flying off too fast, so it is served well chilled. The aroma is like white grapes and the taste is fruity like green apples, which I personally like. It will go well with the coming season. We enjoyed it deliciously😊. Alcohol content】15%. Umeshu (plum wine) made with sake and a new encounter with lactic acid bacteria beverage. Unfortunately, I was not able to go on a "sake brewery tour" of three historic breweries (Yamaguchi Shuzo Brewery, Yamanohisu Sake Brewery, and Miinohisu) in Kitano-machi, Kurume City and Otouaricho, Mitsui County, but my boss at work bought a bottle for me. It has a strong calpis-like sweetness and a plum wine flavor. It has 8% alcohol content so it is easy to drink 😊. Day 2, even more drinkable and tasty with carbonated water😃.

The label of Chiebijin's junmai sake is a kanji version. It is recommended to be served cold or warmed. Today it was served cold. We paired it with a prosciutto salad and shrimp ajillo in a wine glass. It is easy to drink as the umami of the rice spreads gradually 🥂 It goes well with Western food as well. 3/23 It was quite cold outside today, so I heated up the rest of the sake. 50°C ⇨ Sweet and deep flavor, definitely tastes better than chilled. Then at 80℃, we heated the rest of the sake to 80℃ ⇨ The aroma of the fillets is delicious. But it's bitter and hard to drink 💦. It was served with Oita's specialty toriten (chicken tempura). I bought it because I happened to be able to reserve it during my last visit. This fresh Kuheiji can be enjoyed only once a year in a light nigori. It's a weekday, but open the bottle! The balance between the nigori's subtle sweetness and clear, sharp acidity is superb. Since today is Mimosa Day, we served it with mimosa salad, fried cod, and miso soup with Chinese cabbage. 100% Yamada Nishiki produced in Kurodasho Alcohol content 16%. 720ml 1,800 yen, tax not included

By hometown tax payment. This is a two-pack with the Muryosan Junmai Ginjo that I posted last time. This sake is brewed with the highest quality Yamada Nishiki rice polished to 40%. I found this one to be sweeter. The change to a crisp acidity can be enjoyed.

The highest series of the Kido brand. It was the world champion at the International Wine Challenge 2020, the largest sake contest outside Japan. I received it as a hometown gift. It is easy to drink with a fruity sweetness and a slight sourness.

This sake is made from sake rice produced without the use of any pesticides, and is made using the traditional "nakamoto" method and wooden vats. I went to buy it because it was introduced by the sake general as a sake that would give me energy for tomorrow. It has a mild and gentle taste. This sake is made by a manufacturer with a 300-year history in Shiogama, Miyagi Prefecture. I heard that Tamori-san also praised it. I was able to buy it at my local supermarket. Fruity and easy to drink. It goes well with food. Bon Lapas 300ml 800yen, tax not included

This junmai daiginjo is made in the Nanbu style, using the "Daijishimizu" brewing water, which was selected as one of the 100 best waters of the Heisei era, to maximize the gorgeous aroma and flavor of the rice. I bought a 300ml bottle at my local supermarket. My first impression was that it was thin. But it is refreshing, easy to drink, and delicious. I served it with grilled mackerel.

Hyakumoku is a junmai daiginjo sake made from 100% Yamada Nishiki, which is grown under contract in the Yoshikawa Special A District of Miki City, Hyogo Prefecture. One sip and the mellow flavor spreads and is delicious! Today, it is served with cheese almonds, which is a peculiar combination.
