Today is Takeba after a long time.
It is a sake from Noto, Ishikawa Prefecture.
To be honest, I was getting a little bored with all the summer sake, so I chose this one for a break.
I have a bit of a cold, so I can't really smell the aroma, but it seems mild.
To put it simply, it is a dry, crisp sake with a low sweetness and a focus on umami and acidity, but it has a lot of umami.
I can feel the umami of the rice more than any other sake I have had this year. The acidity is also strong, as it is Yamahai.
The alcohol content is 17%, so you can feel a sensation of heat in your chest.
It also has a nice sharpness. Hokuriku sake has an image of being dry and sharp, and this is no exception.
I know I'm rambling, but it's very tasty.
For the first time in a long time, it seems to be right in the middle of my tastes.
I'm drinking it at room temperature, but I have a feeling it would be good warmed up a bit, so I might try heating it up to human body temperature tomorrow.
