Wind Forest Future Forecast Sake III I've skipped quite a bit, but this will be my last post for last year's batch.🍶 Should I call this a kijo-shu, made by adding Wind Forest's Firebird shochu and Takachō's aged sake to the water-moto mash?🤔 The initial aroma is sweet with a refreshing hint of acidity.
On the palate, it delivers a rich, smooth, creamy sweetness and umami. This creaminess reminds me of the flavor I once experienced in Okura's S.Yedo Arabashiri. It's been a while since I've had such a substantial and intriguing sake. I was underestimating Kaze no Mori. My apologies 🙇. On the flip side, I wondered how fans of the usual Kaze no Mori felt about this, so I searched online—seems opinions are split, haha. It was delicious 🍶✨️
