I realized I forgot to take a picture of it and rushed to find it in the recyclables bin😅. It was chilled to a crisp again this year, but after opening and closing the bottle about 10 times, I managed to complete the opening ritual and poured it into a glass, which was filled with healthy bubbles 🫧🍶. The aroma on the top was a faint hint of koji and a sour-sweet aroma like red apple. In the mouth, the sweetness is more subdued than last year's, and there is a bitter taste and sharpness accompanied by the soda's sizzling sensation. This year, I felt rice in the nigori component. Looking forward to next year😊.

We had it with sukiyaki. You can taste the acidity when you drink it. Slightly effervescent. It has a faintly sparkling feeling. The name "Sake" was chosen with this in mind: "Just as rice, koji, and yeast meet to create sake, I want to be a place where something is born in you through encounters with people, sake, and the climate. That is how they came up with this name.  ~From the website It is fruity and tastes great with sake alone, but it also goes well with meat. It was a great encounter!

It has been a long time since I have tasted a Tobiroki, and it is a Junmai Daiginjo. The ginjo aroma is fruity and reserved. It has a slightly strong acidity and a hint of sweetness. The alcohol is a bit harsh and gives the impression of being peculiar. Was it like this? The peculiarity disappears when you drink it with snacks, and in a good sense, it becomes as clean as water. I bought it because I thought it would be nice to try this kind of sake once in a while, but I don't think it has enough impact to outweigh the difficulty of obtaining it or the price. It's a good sake, but I guess it's not really for me... I'm more suited to the everyday sake that I can drink every season without fail.

Tenmei's Sarasara Junmai seems to have been renewed. I remember that the Launching Fireworks label had been available only at retailers, but I wonder if this label will be changed to the default. Clear rice aroma. Beautiful haze, as if it is unfiltered. The sweet and sour apple flavor is quite catchy. It is delicious, but I feel a little sad because it is so different from the Sarasara Junmai.

Summer Shibori of Kuroryu. Huh? I think the summer sake was called Kutouryuu Hiyashi-shu... It has a cucumber aroma typical of Kuroryu with a slight bread-like savory flavor. The taste is quite rich and robust. The sweetness seems to be hidden. It tastes cool and crisp, just like summer.

Last year, I saw this sake on the liquor store's Instagram and was smitten by the sight of two parent and child kurokos side by side. When I went to buy the sake and tried to drink it at home, I noticed that there was only one cat on the label. I asked the liquor store about it by DM, and they told me that most of the labels are for a single kuroneko, but occasionally there are labels for a parent and child kuroneko. So this year, I went to the back of the display to explore the things on display and to my ...... surprise, there was a tiger cat at the very back! I jumped up and down and bought it. To tell you the truth, I was surprised. The aroma is a refreshing, rummy, hearty kind. Despite the catchy label, the taste is very refreshing and excellent as a food sake. This brewery has a tendency to do that.

Junmai-shu made with Amezuri's apple acid yeast. It has a pleasant, fresh aroma like green apples. The refreshing acidity and sweetness spread out and at the end you get a bit of a sake taste. This brand is delicious, but it is often super expensive, so I often don't buy it, but this one is relatively reasonable and has a beautiful label. I bought it because it was relatively reasonable and the label was beautiful.

Toyobai's special junmai sake. Delicious on the rocks, deliciously dry. Even with pure ice, its gorgeous apple-like aroma spreads gently. The strong flavor, which can be harsh when drunk on its own, is softened when ice is added, making it a dangerous sake that can be drunk in large gulps. It is a delicious combination of sake and shochu.

Southern Bessatsurai, raw sake. Fresh and fruity aroma. Oh my, the attack is sweet and sour, contrary to expectations. Fruity flavor with the freshness and strength of nama-shu. There is a very slight fizzy sensation on the tongue. I enjoyed the fire-aged Betsuatsurai before, but the nama-zake is also delicious.

I receive Tenmei's Ichibi Leap No. 1. I left it in the refrigerator for a long time until the last day of March. The gorgeous ginjo aroma is like a ripe pineapple. The sweetness and acidity are also fruity, and the flavor is sparkling. I felt as if I was drinking Kudokyuu Jr. If the taste and aroma are both extremely fruity, you may have a hard time finding something to snack on. It's not good with grilled sea bream sashimi. It might go well with carpaccio style with olive oil and citrus fruits. But I don't have olive oil.

It's delicious. I have been enjoying Aizan recently, and I like the balance between the sweetness that is typical of Aizan and the bitterness (knowingly) derived from Omachi the best. It has a sweet mouthfeel and the bitterness gives it a nice kick. It has a slightly fizzy taste at first, but after a few days, it settles down and becomes smoother. The change is also nice.

I haven't bought akabu in a long time. This may be the first time for me to buy Aizan. I had Aizan Nabeshima a while ago, but it was totally different. Both have sweetness, which is similar to Aizan, but Nabeshima has bitterness at the end. Akabu is more like a freshness at the beginning. It is difficult to decide which is better. It is not necessary to choose one or the other.

Takashi's Junmai Ginjo Sakura Label. It is made with Wakamizu from Kanagawa Prefecture. I have the impression that Takashi and Tanzawayama are usually made with a rather robust flavor, but this Sakura Label has a slightly vanilla-like sweet aroma that gave me a different impression than usual. The flavor is robust and not too sweet, but the sweet aroma makes it easier to drink. The back of the label is beautiful and pleasing.

Black Bakuren. Even though it is super dry, it has a good umami flavor and is easy to drink despite being a draft sake. It has a catchier taste than Akabaku. Still, hmmm...maybe it's time to buy akabaku for the first time in a while.

I have always been curious about this pure Nagurayama. It has a very fruity aroma. Pineapple type? The taste is... sweet and refreshing, and then sweet and astringent and sharp again. Mr. Nagurayama makes delicious sake. Aizu Shikon was also delicious.

Today, we will have a medium-fermented fourth from noon. The aroma is mild. The taste is full of acidity, followed by sweetness and umami. The concept of balancing the sweetness and umami with the acidity is well executed. The impression is that the sweetness is well controlled by a straight line of acidity that is not unpleasant. The fact that it still gives a sweet impression is a charm.
