Aomori has a strong image of rice wine, but Toyobai is famous for its hidden sake. The sake rice, Toyobai rice, is unique. I held out for it as a weekend treat. I had it at room temperature, and the aroma was exactly that-fruity, like a melon. The first attack was sweet, but it was soon followed by moderate acidity and bitterness. It has a nice sharpness and does not interfere with the taste of food, so it is very useful as a food wine. Tonight, I served it with sweet pickled ginger as a snack. It will make you happy.
