I was given a spring sake. The aroma is sweet and gentle. One sip and it is just like spring, with a sweetness like white peaches and a faint gassy feeling. The sweetness does not drag on, and there is a slight bitterness. The accompaniments were vinegared miso with rape blossoms and firefly squid pickled in soy sauce. They go well with rape blossoms. The sweetness of the fish makes it difficult to pair with the vegetables, but it is not unpleasant. This sake made me think that I would be happy if I could drink this kind of sake while viewing cherry blossoms.
