Junmai Daiginjo. Polishing ratio 50%, alcohol content 14%. This is the first Discovery series since Identity, which we drank last year. This year it is from Adapt. It is light, cloudy, and tangy. It has the same gaseous sensation as the steadfast Fusakogane. I wonder if it rounds out after a little while after opening the bottle. It has a delicious aroma and flavor of rice. When it goes down the throat, you can feel a little bitterness or astringency. This area may be different for different tastes. The label reads, "This series uses only rice produced in Chiba Prefecture and explores its charms and possibilities. This year, it is a light nigori (light cloudy) sake! The theme of this series is to "adapt" to the rapidly changing climate and world of the past few years by improving our technology. We have designed it to be served at this time of the year. We aim to create a flavor that is "adaptable" to the occasion and the times in which it is consumed. I would like to try the other Discovery series if they are available.
