100% Yamadanishiki, 55% polished rice. It has been a long time since I have had this wine. I bought it at a liquor store I visited for the first time. The taste is quite refreshing. It is refreshing, but the umami of the rice can be felt. It's nice, just like a summer gin. Personally, I have an image of Yamada-Nishiki as being rather sweet, but this sake is sharp, clean, and dry. I like this sake very much.
