Junmai Daiginjo. Alcohol 14%, Polishing ratio 50%. The full-bodied and umami taste with a fruity sensation develops. It has a gorgeous aroma and a crisp, refreshing taste. It is delicious during the hot season. I felt that there is a good balance between the umami of Yamadanishiki and the tanginess of Gohyakumangoku. The label says, "This series uses only rice produced in Chiba Prefecture and explores its charms and possibilities. This year, it will be available in a light nigori (light cloudy) color! The corporate color blue represents our mainstay rice, and we titrated it to reflect the fact that our master brewer carefully controls the unrefined rice as if he were handling jewelry. We aimed to create a fusion of a delicate, smooth texture and fine gasiness." Of the DISCOVERY series, this is one of our favorite sakes.
