100% Kuranohana from Miyagi Prefecture, 50% polished rice, 16% alcohol by volume. Miyagi yeast is used. It has been a long time since I have had a bottle of Suminoe. It has been difficult to find it in our neighborhood, but we finally found a liquor store near our house that carries it. It has a clean and crisp taste. It goes well with all kinds of food when it is well chilled. It seems to go especially well with seafood. After all, Suminoe is delicious. The label says, "The second generation of the series was created using local rice, water, and yeast from Miyagi Prefecture, with the theme of pure, unadulterated, sharp, and dry (=SoLID solid). It is a sharp and dry junmai ginjo-shu that is fully fermented at low temperatures and retains not only the spiciness but also the clear taste of rice. This season's Kura-no-Hana has no summer temperature problems and the sake rice is of very good quality, resulting in a very harmonious, very dry sake. Please give it a try. It is a delicious sake with a delicious umami flavor and a refreshing sharpness.
