Long time no see Kido!!!!!!!!!!!!!!!!!!!!!!!!!!! This is my first time in the Muryozan series and I'm looking forward to it✨ I found it to be very tasty, with a clean minerality and just a hint of fruity sweetness without any quirks!!! It's the type that goes down like water 👍. And yesterday, I was fishing in Wakayama. I was aiming for kampachi, but I caught a lot of groupers 🤣(some of them are not in the picture lol) Kido also has a brewery in Wakayama, so today we enjoyed a Wakayama meal with the grouper we caught and Kido✨✨✨✨. Best to say the least ✨✨✨.

I actually opened the bottle at the end of the year, but I was late posting it. m(*_ _)m Immediately after opening the bottle, the main aroma was of rice, and the fruity flavor was rather subdued. After letting it sit for a little less than a week and drinking it again, the sweetness and fruity taste like ripe pineapple could be felt, and it became very easy to drink ✌.

New Year's Special, keep posting! Nabeshima Aiyama Junmai Daiginjo! I managed to purchase the last bottle on my recent trip to Kyushu! This is a special daiginjo brewed by Tomikuchiyo Shuzo (Nabeshima) from the well-known and rare "Aiyama" rice! This pink label was surely going to be delicious. I wonder how it will taste. What do you think? Now, open the bottle! Ahh, this is quintessentially delicious! LOL! (1) Slight schwarziness 2) Elegant sweetness with acidity, fruity like strawberry (only possible with pink label) (3) Pleasant ginjo aroma (you can also taste the deliciousness of rice) (4) Clean aftertaste Really delicious! I can't stop drinking it! I sealed it up for today with the further expectation that it will become more "Aizan-like" as the days go by. So, I'll be drinking a lot of sake this year, too! Thank you for your continued support this year!

Happy New Year 🎉 So we're opening a special for the first time in the new year! One we miraculously stumbled upon on our recent trip to Kyushu! Nabeshima Akitsu Yamadanishiki 35% Junmai Daiginjo This is a very special bottle brewed by Tomikuchiyo Shuzo (Nabeshima) with 35% special A Yamadanishiki from Tojo Akitsu in Hyogo Prefecture 😭. It is a great sake in both name and reality, having won gold medals in Japan and Kyushu last year. I've never had a sake that expresses such a full aroma of rice so well 👌✨. It's a very elegant and delicious sake! 1) Soft sweetness (2) Immediately followed by juicy and full rice flavor (ginjo aroma?). Yamada Nishiki? What the heck is this?) (3) There is a lingering aftertaste, but it is sharp, refreshing and clean. →(4) It goes very well with grilled crab (probably the best with any grilled food, especially vegetables and seafood. (Probably goes well with any grilled food, especially vegetables and seafood.) It enhances the natural flavor of the ingredients! It's also suitable for matching with meals like that! Hirotogawa! First at room temperature! The first day it wasn't particularly distinctive, but from the second day on, it was delicious, with a firm ripe melon, muscat-like fruit aroma! Next, I had it lukewarm, about 40 degrees! This also broadened the aroma and was very enjoyable! December is the month of sake rush, so there is a lot of sake to drink... I'll be careful not to get a hangover, but I'll enjoy comparing sake! LOL!

Akabu is good! Slightly sparkling, sweet, low alcohol content, and insanely easy to drink! It's not fruity, but more of a refined sweetness (similar to sugar or caramel) 🍶. This is definitely one of my favorites! Postscript. The second day, it added some acidity, which I personally like even more! I will buy it when I find it in the future.

Abukuma Hatsu Shibori Unfiltered Nama(New brew in 2022) Oh no! This is too delicious, (personally) 720ml was not enough! Terrible 😱. Anyway, it's first pressed, unfiltered, unfiltered, unhydrated, unpasteurized, unpasteurized sake, so you can enjoy the unique taste of the finest sake! It may be hard to find, but I highly recommend it👍. It's too good to eat while eating oden 😇🍢🍢. Thank you Kadoya Sake Shop 😊.

Kaze no Mori Drinking Comparison Series♪ Today we're comparing this season's Alpha1 with the dewy leaf wind 807! 🍶✨ dewy leaf wind 807 This is a unique sake made with 80% polished dewy leaf wind, the only rice recognized as suitable for sake brewing in Nara Prefecture! Pop when you open the bottle! A bubbly sensation as expected from Kaze no Mori 😊. The mouthfeel directly conveys the umami of the rice! Of course it has sweetness (more like rice sweetness than fruity), but you can also taste a little sourness and enjoy the complex aroma that comes from the 80% polished rice ☺️. Sake lovers can't get enough of it 🤤. I'd recommend it to anyone looking for a different kind of Kaze no Mori to drink!

Today, too, we compare the Wind Forest drinks ✨. First word, awesome!!! First up, this season's edition of Alpha1🍶 just arrived. They have made the following changes this time 🤭. Alcohol content: 12% to 14 Polishing ratio 65% to 70 This has given the sake a sweeter taste and deeper aroma. We opened the bottle immediately while looking forward to it! Oh, I may be offended if I say this, but... This is a slightly carbonated juice. Low alcohol + rummy sweetness makes it easy to drink... ♪ Akitsuho 507 is more fruity, but this is easier to drink👍. It's only 1,430 yen for 720ml, so it's too good a deal! I'm going to enjoy it as time goes by! I will post the dewy leaf style separately!

First time at Sharaku😊 It was an elegant yogurt & fruity sake with a hint of lactic acidity ✨. It tasted so much better after a little time than right after opening the bottle, like a flower opening. And what can I say, we had a luxurious drinking comparison with Senkou (¡°Oh!). I am speechless now. 😋 And then today, Benihana Musume, the highest quality mikan (Katsudo 28), arrived from Ehime. Um, I've never had 🍊 like this before, so juicy, thick-fleshed, sweet and tart (((o(*p▽▽*)o))). Japan is the best.

First time The "sourness" of the wine lived up to the rumors. I could understand that the sake, being modern and immaculate, was not only delicious on its own, but also that it did not disturb the food. I also understood that it does not disturb the dishes. This is delicious 😋. I'm sure I'll be a repeat customer. Then, I compared it with Sharaku. Although they are completely different types of sake, I drank both of them easily. It was a luxurious day!

Continuing on from earlier, a series of posts. Compared to Akitsuho 657 (junmai sake), Akitsuho 507 (junmai daiginjo) has a more gorgeous aroma, yet it disappears more smoothly without any cloying taste. The moment it hits the palate, the spicy, slightly effervescent taste and pear-like sweetness spreads refreshingly. Afterwards, a faint smoky aroma could also be detected. (Especially when I started drinking it) Personally, between the two above, I found this 507 to be more to my liking! I would like to drink the Alpha series next.

Today we visited Higashikawa Sake Brewery, located right next to Aburicho Sake Brewery, the brewery where "Kaze no Mori" originated in Gosho City, Nara Prefecture. Of course, we were looking for the Kaze no Mori series. The first bottle was Akitsuho 657, but we chose the Higashikawa Sake Brewery's limited series, which is made with a technique called ikakitori, or colander, which means it is not exposed to air ✨. The flavor is very much like Kaze no Mori. It has a mild, juicy sweetness, with flavors of pear and melon that quickly fade away. I think it has a slightly richer aroma than the regular Akitsuho 657. The price is very reasonable and very nice. The 507 was also great and I will post it separately.
