There is a slight sweet and sour aroma.
It has a very fine texture and seems to permeate the palate, with a slight sweet-sour aroma and a slight tingle on the tongue.

As in my previous post, I bought this at a sake shop in Gosho during a tour of sake breweries in Nara.
It is a cup sake only, so the rarity may be a little high depending on the location.
Drink it cold.
Not much aroma.
It has a gentle Junmai Ginjo-like flavor, but with Shinomine's characteristic rice flavor and weight.
The aftertaste is rather long.
As a food sake, it goes well with a variety of Japanese and Western dishes.
Suitable for intermediate-level sake drinkers.

I have drunk Kaze no Mori many times before. This is my first time to try ALPHA, which is a different series.
Rarity is high in some places.
Drink it cold.
Juicy and slightly fresh aroma typical of Kaze no Mori.
It has the sweetness, umami, and fruitiness characteristic of Kaze no Mori, but I felt a bit of bitterness and heaviness. I don't know since this is my first Bodaiyuan, but I guess this heaviness is a characteristic of it?
The aftertaste is a little long.
As a food sake. It goes well with light dishes, but also with rather strong dishes such as fish in a mild broth or simmered fish.

Today, it's my favorite Wind Forest series!
It's called ALPHA6, brewed with yeast No. 6.
This will be a collaboration with Shinmasa Sake Brewery!
When you drink it, you'll see

I usually only buy 720mℓ, but this one is always short, so I bought it in 1.8L ✨.
It's very tasty with its freshness, sweet and sourness with a perfect lactobacillus effect, and the unique tenderness of doburoku👍.
If you want to drink doburoku, Hyakurugakumon is the best for me personally😊. たっつうKaze no Mori is a popular sake at Sakegawa. I drank a bottle of Kaze no Mori with a friend once and thought it was so delicious that I wondered if such a sake could be found in Gose.
Since I was so curious, I bought a bottle at a sake store near the brewery.
I took a sip with high expectations. It is really delicious.
It has a fruity, pear-like taste, and the carbonation makes it seem like you are drinking a sparkling fruit wine.
Even my family members who don't usually drink sake were raving about it. It was gone in no time.
I'd be a fan if they sold sake like this for 1000 yen 😅.

This is a unique sake made with 80% polished dewy leaf wind, the only rice recognized as suitable for sake brewing in Nara Prefecture!
Pop when you open the bottle! A bubbly sensation as expected from Kaze no Mori 😊.
The mouthfeel directly conveys the umami of the rice!
Of course it has sweetness (more like rice sweetness than fruity), but you can also taste a little sourness and enjoy the complex aroma that comes from the 80% polished rice ☺️.
Sake lovers can't get enough of it 🤤.

First up, this season's edition of Alpha1🍶 just arrived.
They have made the following changes this time 🤭.
Alcohol content: 12% to 14
Polishing ratio 65% to 70
This has given the sake a sweeter taste and deeper aroma.
We opened the bottle immediately while looking forward to it!
Oh, I may be offended if I say this, but...
This is a slightly carbonated juice.
Low alcohol + rummy sweetness makes it easy to drink... ♪
Akitsuho 507 is more fruity, but this is easier to drink👍.
It's only 1,430 yen for 720ml, so it's too good a deal!
I'm going to enjoy it as time goes by!

Compared to Akitsuho 657 (junmai sake), Akitsuho 507 (junmai daiginjo) has a more gorgeous aroma, yet it disappears more smoothly without any cloying taste.
The moment it hits the palate, the spicy, slightly effervescent taste and pear-like sweetness spreads refreshingly. Afterwards, a faint smoky aroma could also be detected. (Especially when I started drinking it)
Personally, between the two above, I found this 507 to be more to my liking!
I would like to drink the Alpha series next. TakaToday we visited Higashikawa Sake Brewery, located right next to Aburicho Sake Brewery, the brewery where "Kaze no Mori" originated in Gosho City, Nara Prefecture.
Of course, we were looking for the Kaze no Mori series.
The first bottle was Akitsuho 657, but we chose the Higashikawa Sake Brewery's limited series, which is made with a technique called ikakitori, or colander, which means it is not exposed to air ✨.
The flavor is very much like Kaze no Mori. It has a mild, juicy sweetness, with flavors of pear and melon that quickly fade away.
I think it has a slightly richer aroma than the regular Akitsuho 657.
The price is very reasonable and very nice.
