Today's sake is a special junmai from Hirotogawa.
It has a light, refreshing mouthfeel that is hard to believe it is 16 degrees alc. The umami of the rice spreads slowly, followed by a slightly tangy, bitter taste. The aroma is modest at first, but as the temperature rises, a slight melon aroma emerges.
The melon aroma and flavor is stronger on the second day after opening the bottle.
It is a beautiful sake that is soft and fresh and should not be drunk too much 🥰.
