The first bottle for November is a junmai nama sake from Daishichi. This is a cold-aged nama sake.
Since it requires refrigeration, it has a slightly fruity aroma like muscat when you sip it while it is chilled. I never expected to smell muscat from that Daishichi! This is delicious!
As you continue to drink, you will be surprised to find a complex umami flavor with a firm acidity and spiciness!
It is a fresh and refined version of the usual Daishichi sake.
The sake is Daishichi, and the umami comes first 😆.
