Tasake Junmai Ginjoshu Yamahai
I bought this bottle when I bought the 50th anniversary bottle of Tazake.
Since we were so excited, we did a comparison of Tasake's Yamahai!
The Junmai Ginjo was fresher and lighter on the palate, but it was hard to tell the difference! KumakichiSake opened since last weekend Part 2
Tazake 50th Anniversary Bottle
We had to give up one bottle of this sake at the liquor store we usually go to, but we were able to buy it at Kakinuma without any conditions, so we added another bottle!
Although it is a Junmai sake, it is a Yamahai Junmai sake made from 50% polished Kojo-Nishiki, and the price is about 3000 yen!
It was a bit expensive, but as it was a commemorative sake, we opened the bottle to celebrate. The balanced flavor was typical of yamahai sake, and we were able to take our time and enjoy the history of tasake!

I served it at a drinking party where my friends gathered at my house and everyone was impressed with how good it was! It was a good decision to buy a bottle!
Sake rice: 100% Omachi
Rice polishing ratio→60
Alcohol content→15 degrees Celsius よすけLess sweet than the sake I usually drink. It is clean and crisp.
Pairing:Squid Somen よすけIt is refreshing and easy to drink. It is delicious and does not interfere with food.
Pairing: Yakiniku (grilled meat) TonyFruity aroma, mild and light sweetness on the palate, with a strong umami and bitterness. Y.TokushigeKuchiman's standard sake. It has a clear, clear sake quality and is slightly acidic and light. It is similar to Kubota's Senju. It has a little more umami and sweetness than Kubota. However, this is not my favorite type of sake.
Sake rice: Aizu rice (Gohyakumangoku, Yumenokou, Himenomochi)

Yeast→Utsukushima dream yeast Y.TokushigeDelicious watery cleanness. A little fresh, crisp, muscat-like beautiful sweetness from the It has a firm, Omachi-like flavor, but is gentle and smooth on the palate. It is delicious!
Sake rice: 77% Bizen Omachi (Kake rice)

Alcohol content: 15 degrees Celsius Y.TokushigeIt has a fresh and beautiful sake quality, but the fresh youthfulness seems to be rough and the taste is not well integrated in my personal opinion. I wonder if the balance between acidity and astringency is not quite right!
In the grand scheme of things, though, it's delicious!
Sake rice → 80% Izuwasanzu from Yamagata Prefecture
Polishing ratio→50
Alcohol content→14 degrees Celsius Y.TokushigeSharp, acidic, clean, sweet and tasty. I can also taste the flavor of wooden vats. I like the balance of refreshing acidity and umami.
According to information I found on the Internet, the flavor is a bit hard right after opening the bottle, and it tastes even better after a few days.
Normally I would drink about 3 gou of it at once, but today I think I will hold out for about 1 gou and let it grow!

The sharpness has decreased, and the woody flavor has also decreased a lot. However, I don't have a very sensitive tongue, so I don't feel that much difference. In my personal opinion, I even think it is better the first day.

I think the acidity has softened and the umami has increased.
I am glad I let it sit. I think it tastes better now. よすけMelon running through the mouth. Easy to drink like a summer sake.

Last year, it was sold out immediately when I went to the store to buy it, but this year, I managed to get it on the day it went on sale by sticking to my computer and using a Saketaku,
This year, I managed to get a bottle by using a saketak after I was stuck on the computer on the day of release. I thought it was just a "Yukidaruma", but the taste was absolutely superb! It was one of the top 3 tastes of the year!
The crown is perforated, so you expect a fizzy feeling, but when you take a sip, it is a very mild lactic acid drink!
The taste is soft, sweet and smooth with a low alcohol content of 13 degrees.
A refined sweet and tasty nigori sake like Snowman<UA Snowman<UA Dragon (eto)<HelloWorld
This was a definite recommendation for those who like Sentori & sweet & tasty!
SakeLab Tokyo seems to have some in stock, so if you can come to the area, you should definitely try this bottle!

100% Yamadanishiki produced in Tottori
When opened, there is not much aroma.
The color is clear with bits of rice floating in the air. It is not nigori.
When drunk, it has a light and refreshing mouthfeel.
There is no sweetness, but instead a heavy umami flavor. It stands out because there is no extra flavor. It is right in the middle of junmai sake 🍶🌾🎯.
Occasionally, a sour aftertaste comes with a piquancy ⚡️. The sensation is so numbing that it could be mistaken for spiciness. If I wasn't used to drinking sake, I might have thought it was spicy.
Perhaps it is a classic type of sake, but it was easy to drink without feeling alcoholic 😄.
The sake 🍶 by itself is well worth a look 😤. keitaFirst Hirotogawa Nigori 🍶.
