Ura-Roman is a blend of several Junmai Ginjo classes from the Romain series.
When poured cold in a glass, it has a gorgeous aroma, followed by a full sweet umami flavor, then acidity, spiciness, and finally umami bitterness, with a good balance of sweet, spicy, and sour.
When heated, the sweet umami expands and the spiciness sharply cuts through the sweet umami. Heated sake is perfect for this time of year when the weather is getting colder. ☺️
