This is the red label of Denshogiku, which sells out immediately and is becoming harder to find every year. First, let's take a sip of the supernatant. It has a juicy sweetness that overflows with a gaseous sensation, followed by a slight accent of umami bitterness. It is delicious and neatly organized 😊. When mixed well, it is silky smooth with a hint of orikura. It is even more delicious with increased umami and richness 😋. I'll be drinking more next year, praying that I can drink it again...

I will have a peach-colored Tenmei! It has a soft sweetness and at the same time, it is refreshing and clean with a sense of umami astringency. Kikusen by Nishida Sake Brewery. I had already drunk the same brewery's rice wine, but this was my first time to try Kikusen! It has a sweet aroma and a soft sweetness. The sweet aroma, soft sweetness, and a bit of sweetness, but the spicy bitterness that comes later tightens it up, and the more you drink it, the more umami it tastes. I haven't been able to drink Sentori since the label change, but today I will have a bottle of Retro Hi-ire! The label already has a retro feel to it. There is almost no standing aroma. It has a soft sweetness with a hint of sourness. The bitterness and spiciness with umami gradually come out and disappear beautifully at the end. The natural flavor of the sake's natural yeast yeast production ensures that you never get tired of drinking it, and the alcohol content of 13 degrees Celsius further accelerates the drinking process. It is not as old-fashioned as it appears on the label, and its acidity makes it the perfect sake for the lingering summer heat of this season 😋🍶.

This is also my first Yamazan! We had the light nigori, which is a 55% polished Hitogokochi! It is sweet and sour and juicy, with a hint of bitterness, but it is also slightly sweet and greeful. The first bottle of Bizen Omachi was opened! Today is Shinsei Day! Although it is not No.6 this year, we opened a bottle of our favorite colors Viridian 🎉. It has elegant sweetness and umami, acidity but not too strong, and a slight bitterness at the end. There is also a slight aroma of wooden vats. None of the sweetness, umami, acidity, or bitterness stands out, but the four tastes become one, complementing each other and doubling the deliciousness. The first bottle of this season's summer sake is a nice to meet you, Yamabusyu Summer Session🌻. The sweetness is moderate and slightly dry. The bitterness that comes in the latter half of the bottle gives a grapefruit-like impression, as is typical of summer sake. It is refreshing with a slight gas. The low alcohol content (13%) makes it a refreshing sipper that is perfect for sipping on a hot day.

We will be receiving Nanaro, a sake rice that is new to us! It is a sake rice developed in 2024, and it is a policy not to be released outside of Nara Prefecture. It has a deep sweetness, but at the same time, the sweetness is not overpowered by the bitterness. The balance of this sweetness and bitterness is excellent, and the aftertaste is refreshing and pleasant. It also has plenty of minerality from the ultra-hard water! Nanadoro is another delicious sake that I can't stop drinking more of: ☺️

The first Kaze no Mori in a while was ALPHA6 made with Shinsei No. 6 yeast! As soon as the bottle is opened, it has a sweet aroma. As soon as you take a sip, the rich sweetness fills your mouth. It is soft to the palate, but the flavor is so concentrated that you will not be able to stop drinking more 😆.

It's been a while since I've had an instrumental Masamune, a Junmai Ginjo from Sake Mirai. I drank Sake Mirai in a test brewing before, but this is the first time I have had it under this label, so I will have it right away. It is fresh like a pear and has a gentle sweetness followed by a bitter bitterness with a delicious flavor. The mouthfeel is smooth and light. As the temperature rises, a grape-like aroma emerges, and the sweet and spicy tastes are well balanced and outstandingly delicious! The slightly low alcohol content of 15 degrees Celsius further accelerates the saké, making it a dangerously delicious saké.
