A bottle bought as a souvenir from Niigata.
When we tasted it, we thought it would be a bit more fruity, but it is a dry, umami type. It is not heavy and has a certain lightness.
It is not heavy and has a certain degree of lightness.
Personally, it is a Niigata-like sake.
Drinking with my friend's parents and son who were back in their hometown for New Year's break.
After baptizing a 20-year-old young man with sake at a local sake bar (I forgot to take a picture...)
Drinking sake at a conveyor belt sushi restaurant
First time at Kura
Easy to drink and doesn't interfere with the sushi
The sake has a nice sharpness that disappears before you know it, so you won't get tired of drinking it.
It is neither too much nor too little, and this normality is the goodness of Honjozo.
As one would expect from Niigata, the range of its products is very broad.
At Sushi Restaurant Misaki
This evening, I went to Yatai Sushi with my wife Bibi. We enjoyed the recommended and new menu items and ended with an assortment of sushi.
The Koshino-Hachitoyo was sweet but easy to drink and went well with the sushi.
Niigata Sake no Jin OSAKA⑰
The booth of [Koshinohatoyo].
I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen.
The sake was -5 on the sake meter.
Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake.
It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste.
Sake: Sake with a Sake meter of -10.
Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range.
Koshinohatoyo Junmai Genshu.
The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning.
The image of Rokubun Sen has changed to the image of Kanji characters like "pine blossom".
Niigata Sake no Jin OSAKA⑯
Echigo Sake Brewery of the Ozeki Group is a little-known sake brewery.
Ozeki also has other breweries
Shirakiku Brewery (Okayama Prefecture, Japan)
Yamato Sake Brewery (Saga Prefecture, Japan) (I believe their sake brewery is closed)
Narutaki Brewery (Saga Prefecture, Japan) Juraku Taikoh, Taki
Other shochu breweries are also under the control of Narutaki.
We drank
Echigo's Umakuchi Junmai Sake
Not too sweet, but tasty and delicious!
Echigo's sweet Junmai-shu
As in the past, it doesn't seem too sweet when served cold. It should be served at room temperature or heated.
Nemuchi-san said it was not too sweet for a sake with -10 sake strength.
I got the impression it was a classic sweet sake.
Koshinohatoyo Junmai Genshu
Strong and umami.
Is it possible to sell it at a low price because of the Ozeki Group?
Echigo Shuzo Brewery
Koshino-Hachiho Junmai Ginjo
This brewery is located in Kita-ku, Niigata City.
The rice is polished to 60% Niigata rice.
Gentle aroma, soft rice flavor,
Well-balanced, mellow taste.
#Nihon-shu
I can't smell the ginjo aroma because my nose is dead.
It's so sad.
I think I can somehow sense the gorgeousness of the aroma.
I also feel sweetness,
I think I like this one the best in the comparison.
It goes down my throat so smoothly that I can't help smiling.
It was full-bodied, with a strong sour and bitter taste. It was more of an assertive sake than a complement to the dishes, but for some reason it was an excellent partner for corn and other vegetable tempura.
Limited-edition Junmai Genzake, domestic rice, 70%, 17%.
It has a slight sweetness at first, followed by a strong bitterness, astringency, and dryness. It is truly light and dry.
Echino Hachiho Echigo sweet Junmai-shu, 4-step brewing, 15-16% 70%, 720ml, 1091 yen
I often drink Echino Yatsuho as a regular sake at Beniton, a chain izakaya in my neighborhood, but this is the first time I have purchased it at a liquor store. Beniton's sake is a simple dry sake, but this bottle is "Echigo-no-sweet".
The first sip gave the impression of a trendy flavor. It is slightly thickened and the sweetness of the four-step brewing process is recommended in a glass of wine.
At -10, the value is also fairly sweet.
I guess a dry one would suit my constitution better.
It is a subsidiary of Ozeki since 1986. The low price is appreciated.
