A gorgeous ginjo aroma.
Fruity and umami-dominant, it is a junmai ginjo-shu with no characteristics in the good sense of the word.
The moment you put it in your mouth, the amino sensation (which is also simple) spreads all at once. It has a mouthfeel like dashi, but makes its presence felt through the throat.
Chichibu-Nishiki Special Junmai Nama-shu Shiboritate

We went to Yao Honten in Chichibu to buy our favorite Chichibu Nishiki.
It has a thicker texture, and the bitterness from the lactic acidity is like grapefruit. It has a punch and a strong flavor. It has a sweetness, but also has a man's sake feel to it.
The boss of the Kinsho-kai told me that Chichibu-nishiki is a traditional sake, and that it might not be tasty. He praised me for changing his image of Chichibu-Nishiki.
I heard that they have started making a new sake called "Wolf Flame" for distributors, but I wonder how it is. I guess it is a trendy sake, but I am curious about it.

Thank you Jay & Nobby! It is true that Tochigi, of course, is not the only place in Japan that handles this product. Please come to Chichibu! The Yao Honten store has a great selection of souvenirs!
Yao Junmai Daiginjo Akaban Omachi 50.
It is juicy with a different taste from the recently released Wolf Flame.
The aroma is cute and sweet with a hint of springtime sweetness and acidity.
When you drink it, a round, fresh sweetness spreads at once, followed by a slightly thick but refreshing acidity.
The sweetness increases in thickness and the acidity suppresses it, giving it a fresh and delicious flavor.
The sharpness of the taste is sweet, but it is relatively well balanced with the sweetness of spring and the freshness of the taste.
Personally, I think strawberries, cream cheese, cured ham, strawberries or a little lemon and balsamic sauce would go well with this wine.
Both were delicious.
