Subtle alcoholic notes. Juicy, grapey, melon-like flavor. It is fruity, which I like very much. The sweetness is strong like juice with a molasses taste, but the aftertaste is clean with a slight bitterness and alcohol taste. I think it is similar to Kaze no Mori. It is an unpasteurized sake, but I tried it warmed. It's also full and delicious. It's different from cold sake in that it has a savory rice smell, and the umami and sweetness are strong, but the taste is clean. This is a gem that I want to drink again.

12% alcohol by volume It has a faintly refreshing fruity aroma. When you drink it, the taste of rice comes first though it is made by Ginjo. There is also a slight banana taste. The taste of the rice is strong as if it were an unpasteurized sake, but because it is made with a low alcohol content, it is not too heavy and can be drunk easily. You may end up drinking too much. If you taste it well, you can feel a light sweetness like granulated sugar. It is the first time to drink it. It was my favorite.

It was recommended to us as a new sake. Slightly clean sweetness and alcohol smell. After the fruity taste, there is a molasses feeling. You can also feel a little tingling and carbonation. The aftertaste is very elegant. I liked it very much.

northern brocade Refreshing and fresh ginjo aroma. It is a good aroma. The taste of fresh tropical fruits spreads in the mouth, but it is not stubborn. There is a faint coconut feeling when you taste it carefully, but it is not unpleasant at all. It was a nice sake with a pleasant bitterness.

the scent of a dream I was told that "Gakki Masamune", which was recommended as a juicy and tasty sake, was now available in Junmai-shu type. It has a refreshing alcoholic aroma and a faint smell of semedyne. It is like drinking grapefruit juice. But it is not sweet at all, just right. It is also my favorite. However, I think the Honjozo has a better aroma. I'd like to compare the two together.

Since it is made without any added yeast, you can taste the gentle honey-like flavor typical of Niida, as well as the bitterness from the low rice polishing and the acidity typical of a traditional yeast mash. Warming it up adds a buttery smell and taste, and the bitterness becomes mellow while the acidity becomes more effective. I felt that the acidity was too strong when it was warm, so I personally felt that it tasted better when it was raised to around 60 degrees. This is the first time I've tasted a buttery flavor in sake, but if you study it properly, there may be a correct way to describe it. It is profound.

dreamy landscape Cold sake. You can't feel the smell very much, but you can feel a faint alcohol aroma. There is a sense of solidity as if it were an unpasteurized sake, but there is little sweetness and the bitterness and acidity give it a clean aftertaste. There is a faint coconut aftertaste. the scent of a dream The design of the label and the beautiful rosé color look nothing like sake. When you taste it, you will find that the sweet and sour taste of cherries has been added to the honey feeling typical of Niida. I think it is different from wine. I'm not a big fan of fruit wine, so I avoided anything made with wine in mind, but this one was easy to drink. Maybe it's because Niida Honke's sake is my type. I would like people who don't like sake to try it.

5000000 pieces of gold Cold sake. It has an aroma like grapefruit. When you put it in your mouth, you can feel a strong fruity flavor. It is quite sweet and dense, but the moderate bitterness and acidity take the strength of the umami well and it is delicious.

Mr. Sakekazu. I like sweet sake, too. I don't usually drink daiginjo that emphasizes aroma, but this one was my favorite because the shop recommended it.

With cold sake. It has a strange smell which is a little pungent. It has a good acidity and is well balanced and easy to drink. It's easy to drink and well balanced. I feel it will blossom even more when heated, but I also like the elegance of cold sake.

The owner recommended a sake that goes well with the tsukudani, and that's what we were served. It has a strong aroma of aging. When you put it in your mouth, it's delicious, with a strong sense of maturity. It's probably because it's been put to bed well, so it has a strong flavor, but it's not harsh at all. When you taste it on the tip of your tongue, it has a dark sweetness like a tropical fruit. It is labeled as super dry, but it is mellow and to my liking. When I paired it with tuna tsukudani, it was a perfect match. The sake and food became even more delicious and I was very satisfied.

Cold sake. Faint sweet aroma of aging. The good sense of maturity is delicious! The low alcohol content makes it easy to drink. Old sake has an image of being difficult to get used to, but perhaps because it is a native-production sake, it has a good acidity and can be drunk easily. When I combined it with thick tsukudani, it lost. If you want to use it as a sake for a meal, heating it up seems to be better. The brewery also recommends drinking it warm. But it's good cold too😊.

We tried to share a decanter sour with everyone, but we just couldn't get the taste right, so we were afraid to try another drink. It has a faint molasses sweet smell and a clean alcohol aroma. In the mouth, it has a refreshing sweetness with a moderate bitter aftertaste. It is like a grape. If you taste it thoroughly, you will find that there is a decent amount of alcohol in it, which may be the reason for the refreshing taste. I'm sorry to say that I was surprised to find such a delicious sake in a very cheap bar for young people.

The sake was unpasteurized, but I figured that Yamahai Junmai would be great heated, so I asked for both heated and cold sake. I tried it warmed first. You can smell the ripe fruit and a hint of alcohol in the air. It also tastes like a ripe melon. It's easy to drink. The cold sake has a very strong taste. It has a ripe sweetness. Personally, I prefer warmed sake that is easy to drink, but if you are comfortable with the density and sweetness, cold sake is more suitable for you. I thought Hyogo had a lot of refreshing sake, but there are breweries with robust flavors.

As the label says, it is a chimeric sake, using three types of yeast on three types of koji. I asked the owner to choose a sake that would look good warmed up, and he served me this one. The label looks like a wine, so I thought he had mistaken me. I was surprised by the strong acidity when I drank it, but it was delicious. To tell the truth, I'm not that good at acid, but this sake had a sourness that I've never felt before, and it was rather addictive. We asked the owner for a warmed-up recommendation, and he served us this one. It's called "Between the fire and the moon," which is a very stylish name. A nice smell of rice rises to the surface. It has a strong flavor and a good balance of sweetness, acidity and bitterness that I really liked. When I thanked the owner for sharing his delicious sake with me, he said, "Would you like to taste some cold sake if you want? And he put it in the boiler. I was surprised when I drank it. There is no smell and the taste is close to nothing. 'It's totally different, isn't it? I was surprised at first, too. Actually, the first sip wasn't very impressive. However, when I tasted it with the sweet and spicy kinpira, it was completely caramelized. It was like drinking my favorite pudding.
