Brewer's yeast from the sake brewing business. On the first sip, you'll get a sense of substance and strong bitterness, despite the funny and cute label. The unique acidity of the sake brewing process is also strong, but it won't lose to the richer food. In fact, the balance of the sake becomes better, and we feel that this is a sake with true value as a mid-meal drink. It is very delicious. The label is beautiful and foil-stamped. Slight acidity and alcohol aroma. The acidity and the fluffiness of the rice are delicious, but it goes in smoothly like water. There is a strong acidic aftertaste, but it is not unpleasant. I am sure that the flavor will expand further when it is heated.

A faint aroma of ripening. Mellow ripeness and rice flavors spread through the air. Delicious! There is a feeling of molasses in the back, but the acidity makes it refreshing so you can enjoy it easily. There is a sour aftertaste, but I don't dislike it, but it has a good aftertaste. It was a strange drink that the taste is lighter on the tongue.

65% polished, #7 yeast. Slightly fruity smell. Easy to drink at 17 degrees. The lingering bitterness and coconut flavor reminds me of grapefruit. The label says it is Junmai, but it may have been made as a ginjo, and it has a gorgeous flavor like a Junmai Ginjo. It is a beautiful sake which explains the popularity of Kaze no Mori.

The aroma of honey and a hint of alcohol tickles the nostrils. The sweetness of honey, the deliciousness of rice, the bitterness of grapefruit, the sourness, and the Niida-like sweetness come together to create a rich honey finish. As it heats up, the alcohol flavor becomes stronger and the honey aroma is less pronounced. Instead, you can smell the freshly cooked rice. It tastes of freshly cooked rice, soft honey, and a strong sour taste. It smelled great in the lukewarm temperature range, so I may have raised it too high. I would like to try it lukewarm next time.

Almost no smell. In the mouth you get a light sense of maturity and rice flavor, with just the right amount of bitterness and acidity in the aftertaste. A very easy to drink example of junmai sake. As you savor it, you can taste the molasses-like sweetness. When I asked for another cup warmed up, it had too much of a banana flavor that I didn't like. The banana flavor decreases as it cools. Cold sake seemed to be the right choice for me.

Label on the left. I told the shop that I liked it and they recommended it to me. Clean smell. A beautiful molasses taste in the mouth. The faint alcohol makes the mouth feel fresh. It was right in the middle of my taste buds. I usually don't order anything labeled as dry by myself, so this was a good tip-off for me.

A faintly sweet smell. In the mouth, a sense of ripeness, coconut, and rice flavor spreads in the aftertaste. It's delicious, but I felt it was a little too alcoholic in the cold brew. At room temperature, it smells like Shaoxing wine. The flavor becomes mellow and the taste increases. It is very delicious. I think this is a good drink for warming up.

Sour fruit smell. The taste of apple and molasses spreads and the sweet and sour taste is pleasant. It has just the right amount of acidity and alcohol and has a clean aftertaste. It is light, well balanced and easy to drink. At room temperature, the aroma of molasses becomes stronger. The flavor of the rice increases to make it more likeable. I didn't notice the umami when it was chilled. It might be better warmed up.

Middle. This photo is difficult to understand as only the tasting version remains. It has a faint aroma of ripening and fresh alcohol. In the mouth, it has a light maturation taste, and the aroma of rice is softly lingering. It has a light Junmai-shu taste, and the aroma of rice lingers softly. At room temperature, the rice flavor comes out even more, and the balance is delicious. It looks good warmed up.

Right label. Tsururei's Sanpai is rather rare and was recommended to us. The smell is a faint alcohol. When you take it in your mouth, the taste of rice and sweetness spreads freshly. There is an acidity in the aftertaste. It is a well-balanced sake that does not interfere with the food. The acidity at the end is a bit harsh, but I think it is within my favorite range. I would like to try it warmed up.

The label on the right. It is made of Shiga Asahi Rice. It has a faint smell of molasses. In the mouth, the flavor and sweetness spreads strongly. But it is pleasantly strong. It tastes a little like de-lamped liquid, but this may be what makes the aftertaste refreshing. I don't usually like this flavor, but I like this one.

Middle label. It was very mature and I have to admit, I didn't like the taste of it. However, when I paired it with food, it was a huge transformation. When I paired it with a fish dish, the fresh and faintly sweet taste became strong and the fishy smell of the fish disappeared. The taste of fish and the smell of fish disappeared. I would like to try this with other dishes again, but it's a shame that it's a project and not widely available. Sake is a once-in-a-lifetime experience.
