Ryuban純米原酒
森田淳也left label According to the shopkeeper, it's not an Akita sake. Akita sake is sweet and light, which is the exact opposite of what you would expect from an Akita. The flavor of this sake hits you right away. The rice flavor and sweetness coexist, but the aftertaste is not harsh. It has 17% alcohol content because it is an unpasteurized sake, so I drank it easily. But it is an unprocessed sake, so it has 17% alcohol content.

森田淳也The one you can sample at the bar is a fresh brew, and the one you buy by the bottle is fire-roasted. The tingling sensation of the carbonation is clearly evident. It's low in alcohol content, quite sweet and tastes like melon itself. There is almost no alcoholiness to it, so if you don't like sake, or if you like sweet drinks, this was a muddy sake to try. Those who can drink it may find it a little underwhelming.

OosakazukiDEEP AUTUMN純米吟醸中取り
森田淳也The label on the right. It has a refreshing ginjo aroma. In the mouth, the apple-like flavor and sweetness spreads, but the moderate acidity finishes it off elegantly so the aftertaste is refreshing. It's fire-roasted but has a freshness to it that I liked.

森田淳也The label in the middle. It is a junmai ginjo, but it is close to the taste of junmai sake. The aroma of maturity and the flavor of the rice rushes into the mouth, and it is full. The aftertaste is moderately long and happy. The slight acidity may be what gives it just the right amount of aftertaste. I liked it. I am sure it can be enjoyed warmed up as well.

トミツル純米吟醸ひやおろし
森田淳也Right label. It was recommended as the #1 most popular by our staff, so we got it. Sweet pale apple aroma. In the mouth, it has moderate acidity and fruitiness, but also fullness. Slightly too much alcohol? The second drink was warmed up, as the owner said it was even better warmed up. I've had it from 55 degrees Celsius to 40 degrees Celsius, but I like it lukewarm.

森田淳也A refreshing alcoholic odor with a molasses-like sweetness. The molasses and caramel-like flavor is stronger in the mouth than the first. However, the perfect amount of alcohol keeps it in a good aftertaste. As it warms up, you can smell the fragrant aroma of rice. I like the second one better when it is warmed. I like the second one better when it's warmed, and the cold and warmed versions are completely different. With the specs undisclosed, I'm not sure what the difference between 1 and 2 is, but I like the elegant sweetness and rice flavor I'm looking for in a Hinode original, and I liked the 2 one better, which had more personality. Maybe it's the difference in the rice?

森田淳也Whenever I see the Hinode Original that drew me into the swamp of sake, I always ask for it. We don't see this in Kanto. It has a refreshing aroma of alcohol. In the mouth, it has a different caramel taste than the aged one. It has a sweetness like a gentle golden sugar. It has a strong alcoholic flavor and a faint acidity in the aftertaste. When I tried it warmed up, it was nice and plump, but I think it lost some of its character.

Buyu酒蔵 ひたち錦純米吟醸生酛
森田淳也Green label in the middle. You can clearly taste the sweetness and flavor on the tip of your tongue, but the aftertaste is refreshing. I could drink it easily as I like. The rice, koji and yeast are all made in Ibaraki, and the sake is full of local love. If I ever come across this sake again, I'd love to pair it with Ibaraki's cuisine.

森田淳也Right label. It has a well-balanced aroma of faint sweetness and alcohol. The taste of koji and rice in the mouth. The principle of the principle principle, so we like it very much. If you taste it carefully, you will get a faint scent of coconut. It's massive but the alcohol content is good, so it's very smooth to drink. It is described as being made in a wooden vat, but there is not much woody scent and it is easy to drink. I searched for "short-stalked watafune" and found out it's a type of sake rice. The swamp of Japanese sake is deep and interesting.

森田淳也It has a smooth, moderate aroma of alcohol. In the mouth, the richness of the rice flavor comes through, but it is crisp and easy to drink. It is plump and easy to drink. We asked for an assortment of snacks to go with the ate, which went well with all of them. I didn't have a preference on the menu, so I asked them if they had any other sake, but they brought us this one, which was in the middle of being put to sleep, saying that it was room temperature. The panda on the label was cute and we decided on it immediately. I'm not a believer in opening one's mouth, but I'm happy because I don't often drink the first cup of sake.

Gakki Masamune別撰本醸造中取り
森田淳也left label A masterpiece that conveys the brewery's passionate desire to overturn the image of honjozo. A refreshing aroma with a good balance of sweetness, acidity, and aromatics! Sweet and sour, with a hint of bitterness in the mouth, like a grapefruit. Taste it carefully on the tongue and you will find a hint of coconut. It's not just the smell, but everything about it is refreshing. I'm not a big fan of Honjozo and I don't usually drink it, but the owner of the brewery assured me that it would be absolutely delicious. The brewery has some great sake called Shizengo, but I was pleased to see that they want people to drink good sake at an affordable price point.

森田淳也left label The Macho series was originally named after the low-polished, high-protein, macho, and now this Oka Macho is half male macho and half female macho made from 80% male and 80% female Aiyama. A faintly sweet and sour, refreshing aroma. After that, there is a faint odor of alcohol. In the mouth, the sweetness comes out and the alcohol flavor comes in immediately. It is surprisingly dry. When it goes through the nose, there is a slight taste of rice, but it has a good alcohol flavor and is very crisp. Personally, I would have liked to taste more of the flavor. At room temperature, it tastes like a grapefruit. I think I prefer it at room temperature.

Nabeshima試作酒 特別純米特別純米
森田淳也right-hand side label The owner explains that this is a trial brew from Nabeshima and will probably never be made into a commercial product using this method and will never be served again. It smells like yogurt. In the mouth, it is sweet, with a strong acidity that sticks to the tongue. After that, there is a hint of coconut. (I call it the coconut scent because I haven't studied sake properly) The alcohol is also quite strong, and the aroma is far from my favorite. I got a glimpse of the brewery's efforts to create a wonderful sake that was carefully selected through repeated trials like this one.

森田淳也Smells like Shaoxing wine, but not harsh. The texture is thick and tastes like Shaoxing wine. It is surprising that it is Japanese sake. It is good for sipping in small amounts. The aroma comes from warming it by hand. The aroma of Shaoxing wine is strong, but not too strong. It is like a high quality Shaoxing wine, but it is too clean and may not be enough for those who like to drink it as a miscellaneous taste. The taste is not so different from cold sake. It can be enjoyed on the rocks or with hot water.

It has a moderate sweetness and is easy to drink. It has a moderate sweetness and is easy to drink. When warmed by hand, the smell of acidity becomes stronger and more unpleasant. However, the taste is well balanced and even more delicious. It has a slightly alcoholic taste, so people who don't like alcohol should drink it cold and those who like dry sake should drink it cold. The Sake Information Center of Japan is surprised to find such an interesting sake available for 300 yen in Tokyo's Minato Ward.

Warming it by hand, the aroma changes to honey. The taste is surprisingly sweet, and it becomes dry. It was my first time to drink this brand, but I liked it. This was my first visit to the Sake Information Center, but I was surprised to see this brand of sake available for 100 yen.

森田淳也The honey scent and sweetness spread in the mouth. It was chilled at minus 5 degrees Celsius, so I could drink it at its best. It is good on the rocks or with a little soda water if it is this dense. It would go well with cheese or citrus fruits, but I was not hungry and did not try it. If you like Gewurztraminer, Riesling white wine or noble rot, this is the wine for you.
