The owner recommended a sake that goes well with the tsukudani, and that's what we were served.
It has a strong aroma of aging.
When you put it in your mouth, it's delicious, with a strong sense of maturity. It's probably because it's been put to bed well, so it has a strong flavor, but it's not harsh at all.
When you taste it on the tip of your tongue, it has a dark sweetness like a tropical fruit. It is labeled as super dry, but it is mellow and to my liking.
When I paired it with tuna tsukudani, it was a perfect match. The sake and food became even more delicious and I was very satisfied.
