We asked the owner for a warmed-up recommendation, and he served us this one. It's called "Between the fire and the moon," which is a very stylish name.
A nice smell of rice rises to the surface. It has a strong flavor and a good balance of sweetness, acidity and bitterness that I really liked.
When I thanked the owner for sharing his delicious sake with me, he said, "Would you like to taste some cold sake if you want? And he put it in the boiler.
I was surprised when I drank it. There is no smell and the taste is close to nothing. 'It's totally different, isn't it? I was surprised at first, too.
As the owner says, this is the first time I've ever seen a sake that transforms so much by simply warming it up.
Sake is interesting ☺️.
