As the label says, it is a chimeric sake, using three types of yeast on three types of koji.
I asked the owner to choose a sake that would look good warmed up, and he served me this one. The label looks like a wine, so I thought he had mistaken me.
I was surprised by the strong acidity when I drank it, but it was delicious. To tell the truth, I'm not that good at acid, but this sake had a sourness that I've never felt before, and it was rather addictive. It's a sake with magical power that doesn't lose out at all to the smoked food we were eating at the time, and brings out the best in each other.
