The sake was unpasteurized, but I figured that Yamahai Junmai would be great heated, so I asked for both heated and cold sake.
I tried it warmed first. You can smell the ripe fruit and a hint of alcohol in the air. It also tastes like a ripe melon. It's easy to drink.
The cold sake has a very strong taste. It has a ripe sweetness. Personally, I prefer warmed sake that is easy to drink, but if you are comfortable with the density and sweetness, cold sake is more suitable for you.
I thought Hyogo had a lot of refreshing sake, but there are breweries with robust flavors.
