Domaine Ikeda Comparison with white wine With fish from Fukaura The white wine has a crisp acidity and is more savory than floral. It goes well with flatfish and sea bream! The wine reminded me of the acidity of grapes after a long time! Sake has a delicious rice flavor compared to wine! It has both acidity and rice sweetness, and feels a little more matured and fresh than grapes! Sake has a colorful taste, but it also has a light aftertaste. It reminds me of the richness of wine. There is a lingering sweetness at the end.

I forget the price, but I think it was around 3,000 yen. It is a dream of Hatsuharu no Yume! It was supposed to be opened on New Year's Day, but since it was the Chinese New Year...it was opened a little later. The elegant sweetness flows from the gorgeous aroma, followed by bitterness and alcohol. The back of the bottle shows that it is a little high at 17 degrees. Personally, I would have preferred 14-15 degrees. It makes my lips a little numb. Nevertheless, the graceful sweetness and aroma of 35% Yamada-Nishiki are wonderful. It is a little expensive because it is from a different tank than the one used for the competition, but it is a great value for money! I paired it with pickled firefly squid, but it might have been better to pair the lukewarmness with a hot pot.

It has been a little while since the bottle was opened. When the bottle was opened, I felt grapefruit. Now it is a bit like grapefruit, perhaps because it has matured a bit. The acidity and umami come first and then flow gently. I have the impression that it is a bit too light to be paired with gyoza (dumplings).

Purchased at Cardi's. It's made with wine yeast, or maybe it's because it's a sour, dry wine. It has a crisp aftertaste and would go well with caprese! But the problem is that there are no tomatoes or cheese in the fridge!

Purchased on an expedition from Toyama. First time! Yoshida Kurau, which I had been watching with my fingers crossed until now. What's this, first impression, sparkling Aquarius! What a modern taste! It is transparent, mineral, and slightly sparkling, just like the back of the bottle! Pale lactic acidity? No bitterness in the aftertaste, which is common in this type of wine. This, too, in other words, is natural. Excellent! But what should we pair it with? Sake to be tested. Here it comes!

SATO Hello (^o^) I was curious about this but haven't had a chance to drink it yet (cries) Sparkling Aquarius! I am curious about it. I'm curious about it. It certainly looks like a difficult dish to match it with.

Hi Sashiu! Sparkling Aquarius is just my personal opinion, but I thought it would be difficult to find a dish to pair it with. Do you think it would be good with Southeast Asian cuisine?

I've heard a lot about Himi sake. I have often heard of this sake, but this is my first time drinking it. It is a strange feeling to drink it at such a time, but I pray for a quick recovery, not only for the sake brewery. It is dry. It has a modest umami, a modest acidity, and a melon aroma. It is the dawn of spring. A pale gradation that tints the clear sky. The sun rises with the pale temptation of melon.

freshly squeezed Umami comes first and is washed down by acidity. It is a dry sake that is good for a light mid-meal drink. It has just the right amount of umami. Serve with kabura-zushi and trout-zushi.

For the first time. In Toyama. Viva Toyama. Viva Non Non. Forever cold yellowtail. Easy to drink dry. Aftertaste is dry like water. A little bit of umami in the aftertaste. Pair it with pickled firefly squid and salmon and tofu.

The clear acidity and the gradual umami taste make it a good choice for sushi. It has a nice sharpness and drains off the fat! Perfect as a food sake!

sake made after the first brewing of sake lees The flavor is bursting with freshness. It feels more umami than Tsukiaki, maybe because it is less restless? It is similar to Tsukiaki, but totally different. It has an apple-like acidity.

chub mackerel (Scomber japonicus) Pichi pichi sourness. The sadness that flows smoothly. Yasen always reminds me of a festival night. The image of festival music, movement, and silence. The strong contrast, the shime saba (mackerel), go well with it! Some people feel apples, I feel pears.

Long time no see! Nuru heated. At first, there was a distinctive alcoholic feeling, but it turned out to be a mildly tasty and gentle sake. I paired it with ankimo! It goes well with the other mildly tasty sake!

Seven Sages Sparkling. Second fermentation in bottle. It was paired with sauteed pork purchased in Iwate Town. The meat looked delicious, so we served Shichiken! I am a fan of Tohoku, so I was satisfied with this sparkling wine. It is the best tasting. The sweetness is like the mountains in spring that are beginning to change color. It tastes like cherry blossoms, asagi (Japanese leek), chirichiri (chili pepper), and snow falling slowly.

At first, the wine has a clear, light acidity and umami, and is it dry? But later on, a mild sweetness comes in. It is banana-like. The overall impression is clear and dry, with lingering banana aftertaste. The clear and light taste at the beginning makes it a good food sake.

Fresh and gorgeous liquor. It says "apple" on the back, but to me it feels like grapefruit. The sweet and sour grapefruit flavor runs through it refreshingly, and the bitterness in the aftertaste is also grapefruit-like. Of course, it is delicious!
