Miyazaki Prefecture is the 45th of the 47 prefectures in Japan. Purchased at a roadside station during a drive in Takachiho. The taste was unlike anything I have ever experienced before. The sweetness of the rice came out slowly from the back, but it quickly faded away, leaving me with the feeling that I wanted to enjoy the sweetness a little more. We served it chilled at first, but when we tried it warmed, a slight graininess came out. I think this sake has a rather strong character. Thank you for the sake.

Ginotome produced in Iwate Prefecture is used. As the name "summer sake" implies, you can enjoy its pineapple aroma. It has a refreshing sweet taste in the mouth, with little change between sips, and it finishes with a moderate feel as it is. The slightly low alcohol content and light taste is perfect for the current season. Thank you very much.

Junmai Daiginjo summer sake made with 100% Hokkaido Ginpu. The moderate pineapple aroma enhances the pleasantness. One sip and the pineapple flavor will fill your mouth, and the label design will make you feel like you are in the tropics. It is refreshing, but as you sip more, the robust flavor of the rice oozes out. It was the perfect sake for early summer. Thank you for the sake.

Saitama Prefecture is a hard void to fill. In Kyushu, sake from Saitama is far away, so I obtained it when I came to Tokyo for GW. The first aroma is crisp and fruity. The brewery's website says it smells like banana, but to my untrained nose, it smells like muscat. Expectations are high. When I took a sip, I had the impression that it was a white wine. I was impressed. I changed the drinking vessel from a boar's mouth to a wine glass. It was like a white wine, or rather a soft drink mixed with muscat and grapefruit. How delicious! The sake is unfiltered and a little cloudy. Thank you very much.

This is the first check-in in Oita Prefecture. It is brewed with soft water from the southern foot of the Kusumi Mountain Range. The top aroma is very fruity. It has a nice aroma of melon, banana, and mixed fruit nectar. Take a sip with high expectations. The mellow, sweet flavor spreads. The slight bitterness at the end tightens the overall flavor. It was quite a rewarding and delicious sake. Thank you very much.

Purchased during a visit to Tanba Sasayama in Hyogo Prefecture in late fall of last year. Yamadanishiki and Gohyakumangoku are used for the sake rice. The sake is made by the Tamba Toji. The initial aroma is faintly of rice. It has nothing to do with fruity aroma. In the mouth, you can enjoy the robust flavor of rice accompanied by a slightly strong alcohol taste. The aftertaste is rather long. Perhaps due to the soft water of Tamba, it has a mild dry taste. As the name "country sake" implies, it has an honest flavor that is only as good as the rice used to make it. Thank you for the sake.

This is the 42nd prefecture on the way to conquering all 47 prefectures. The sake rice is Yumesansui, a crossbreed of Yamadanishiki. It seems to be produced in Yamanashi and Aichi. Polishing ratio 57%. The top aroma is clear and elegant, reminiscent of muscat. It evokes the image of Yamanashi, a grape-growing region. The mouthfeel is just as impressive. The taste is refreshing and clear, but it is not light, and the umami of the rice can also be felt. It is neither sweet nor dry, and is sure to be well-liked by everyone. I enjoyed it while remembering the scenery of Yamanashi Prefecture, where I often went for a drive when I used to live in Tokyo. Thank you very much for your hospitality.

Bizen Omachi rice is milled to 60%. This sake rice is said to be difficult to mill to a high degree due to its large heart white. The initial aroma is a moderate sweet fruity aroma, perhaps melon.... Enjoy the aroma, which is a mixture of umami and freshness, for a while. However, when you put it in your mouth, you no longer feel the fruity aroma on the top, and the aroma of rice comes to the fore, and you feel a gap in a good sense. The Muromachi Sake Brewery is said to be particular about Omachi, and we would like to support their unique sake brewing process, which is not possible with Yamada-Nishiki. Thank you for the sake.

Craft Sake Week 2nd glass. It has a pleasant aroma with a hint of fruity flavor. I came to Craft Sake Week at Roppongi Hills. The weather was fine during the holiday weekend, so the place was crowded. The first sake was a rare one in my hometown of Kyushu, Yukino Kayasha. I had a junmai ginjo. The aroma is not so strong, perhaps because it is outdoors, but when you put it in your mouth, the sweetness and deliciousness spreads at once. The light astringency seems to enhance the sweetness and deliciousness. Sake from the Tohoku region is of a very high level! Thank you for the sake.

Purchased last fall when I visited the Gekkeikan Okura Memorial Museum in Fushimi, Kyoto. It is a classic label. It is a product of a long-established company and has a seamless and well-balanced aroma and taste. The first sip is soft and fruity, but as you drink more and more, the delicious taste of rice gradually seeps out. The sake has a smooth taste, so it is easy to drink too much of it. In the quest to conquer all prefectures, Okinawa Prefecture stands as a high obstacle. Sake = Awamori, and "Reimei" is the only sake available in Okinawa Prefecture. Since it is difficult to obtain in the mainland, I managed to get a bottle during my visit to Okinawa! I think it has a slight reddish tinge. The top aroma may be preconceived, but it has a faint banana-like flavor. In the mouth, it has a solid and matured feeling. The rice-derived graininess is strong... The rice polishing ratio is 70%. Sake reflects the local climate. It would go well with Okinawan cuisine, such as raftage. According to the store where we bought it, the production in Uruma City on the main island of Okinawa will last until 23BY. This is my first sake in a while, as I have been biased toward shochu and awamori since the beginning of the year. The rice, called "Izuwanosato" in Yamagata Prefecture, is polished to 60%. Purchased at a convenience store at a train station. Maybe I just don't know about it, but I have not heard much about this brand. Junmai (pure rice) with a 65% rice polishing ratio. It has a simple, unpretentious taste. It tastes a little astringent. The aroma has a nice sweetness. According to the website, it is recommended to be served hot as an in-dinner drink. Purchased at the Hyogo Sake Expo at the Kobe Hankyu Department Store in October. It is made by freezing the original sake, removing the frozen water, and concentrating it to 25 degrees Celsius. For this reason, it is classified as miscellaneous sake, not sake. The top aroma is modest, but the palate is filled with the sweet flavor of concentrated sake. It has an alcohol content of 25% and a gorgeous, rich flavor due to the sake's alkohydrate content. We enjoyed it while eating rummy chocolates. It was so good that I was tempted to drink more sake, but that was dangerous. Well, it's New Year's Eve, so what the heck! Thank you very much for the food.
