We will have a spring sake after half a year. The top aroma is like that of peaches, a specialty of the Kofu Basin. The aroma is reserved, yet smooth and pleasant. In the mouth, it is filled with a fruity aroma that clings to the palate as expected. After a while, the fruity aroma is gradually replaced by the umami of rice, and a good astringent taste appears. There is no doubt that Shichiken is brewed in Hakushu, Yamanashi, which is blessed with clean water. Thank you very much.

It's been a year and a half since I first encountered sake crocodiles, and now we have reached the finale of the 47 prefectures. Today we will have "Tobiran" from Hirado, Nagasaki Prefecture. The bottle was unfiltered and raw, so it was opened with a "spon" sound! The bottle was opened with a pop. When I poured it into the sake cup, it was full of air bubbles. Expectations are high. The top aroma is very subdued. My lazy nose thought it smelled like peaches. When I took a sip, I was surprised to find it was a bit more bubbly than I had expected. After a pause, the elegant and gentle flavor of Yamada-Nishiki seeps out. If I were to use an analogy, it would be the champagne of rice. It was a taste worthy of the 47 prefectures of Japan. Thank you very much.

This is a junmai ginjo from a sake brewery I visited several times when I worked in Kansai. It is about a 5-minute walk from AEON MALL Itami. The acidity, sweetness, spiciness, bitterness, and astringency are well balanced, and if you were to draw a radar chart, it would form a perfect pentagon. It was so smooth and easy to drink that the 300 dl was consumed in no time at all. Thank you very much.

I bought it without hesitation when I saw it casually lined up at a local discount supermarket. The aroma on the nose and in the nose is like that of grapes, melon, and other high quality fruits. You can taste the delicious flavor of kita-shizuku spreading all over your mouth while enjoying the chiri-chiri-ness. From the middle to the latter half of the bottle, exquisite astringency and bitterness appear and finish it off. Hats off to you, Mr. Nabe! Thank you very much.

Here in Kyushu, the heat shows no sign of abating, with temperatures hovering around 35°C day after day. In such a situation, I found a small bottle of cool sake. It says "on the rocks," but I tried it straight. It has a refreshing white wine-like sweetness. It may be a little like plum wine. The low alcohol content makes it seem like a soft drink. Next, I drank it on the rocks. I thought the taste might become weak, but it didn't. I enjoyed it to the end. Thank you very much.

It has a citrusy overtone. On the palate, the bitterness that spreads quickly is unexpectedly refreshing, and is reminiscent of grapefruit. As far as I can tell, there are only two sake breweries in Kagoshima Prefecture, a shochu paradise, that make sake, and one of them is Junmai Ginjo. It has a discreet yet crisp fruit-like heady aroma. When you take it to your mouth, the strong aroma and slightly sweet flavor spreads for a moment, but it quickly disappears and goes down smoothly. It is good to drink it with Kagoshima's specialty, deep-fried kibinago (dried yellowtail). Thank you very much.

I had been refraining from drinking for over a month due to medication, but the restriction was finally lifted. This is Dewazuru summer sake. It is served cold. The aroma is like muskmelon. It has been a long time since I have had this sake, and when you carefully and gently bring it to your mouth, the sweetness and deliciousness of the rice spreads quickly. It is a Junmai Daiginjo. It is not mellow, but rather, it finishes quickly, just like a summer sake. The last taste is a very light bitterness. It was quite a tasty summer sake. Thank you very much.

I was attracted by the label when I first saw it and ordered it. The sake rice is Yume Ikkyo from Fukuoka Prefecture. The light aroma of the rice is relaxing, but there is no fruity aroma. The mouthfeel is smooth and moderately dry, and you can enjoy the umami of the rice. A mild bitterness comes at the end. As the name suggests, it goes well with fish, especially blue fish. The bitterness follows when served with strongly seasoned dishes, and it is smooth and refreshing when served with light dishes. It is a well-balanced and calm dining sake. Thank you very much.

I bought this at a sake brewery when I visited Tottori last November. The father of the brewery said, "I don't approve of sweet sake. I am fine with that because I have a wide range of tastes from sweet to dry. It has been more than half a year since it was bottled, but when you put it in your mouth, you can feel the robust and honest flavor that is typical of strong sake. The aroma is impressive and refined, not like a country sake. The fact that the producer of the rice is also clearly stated on the bottle is also a sign of confidence. It is not flashy, but it is not too assertive and does not pander to the latest fads. Thank you very much.

The elegant and soft sweetness spreads on the palate with a gentle aroma of unrefined sake. The low alcohol content of around 13% makes it refreshing and easy to drink. This sake from Arita, Saga Prefecture, is characterized by its sweetness, with a sake strength of -15. Enjoying the sweet and delicious aroma wafting from the glass, the rich, honey-like sweetness fills your mouth as soon as you take a sip. Miyazaki Prefecture is the 45th of the 47 prefectures in Japan. Purchased at a roadside station during a drive in Takachiho. The taste was unlike anything I have ever experienced before. The sweetness of the rice came out slowly from the back, but it quickly faded away, leaving me with the feeling that I wanted to enjoy the sweetness a little more. We served it chilled at first, but when we tried it warmed, a slight graininess came out. I think this sake has a rather strong character. Thank you for the sake.

Ginotome produced in Iwate Prefecture is used. As the name "summer sake" implies, you can enjoy its pineapple aroma. It has a refreshing sweet taste in the mouth, with little change between sips, and it finishes with a moderate feel as it is. Saitama Prefecture is a hard void to fill. In Kyushu, sake from Saitama is far away, so I obtained it when I came to Tokyo for GW. The first aroma is crisp and fruity. The brewery's website says it smells like banana, but to my untrained nose, it smells like muscat. Expectations are high. When I took a sip, I had the impression that it was a white wine. I was impressed. I changed the drinking vessel from a boar's mouth to a wine glass. It was like a white wine, or rather a soft drink mixed with muscat and grapefruit. How delicious! The sake is unfiltered and a little cloudy. Thank you very much.
