The aroma is fruity, different from No. 6, but I can't tell what it is. On the palate, the sweetness and umami are balanced by the moderate acidity, which is balanced in a distorted way. As the temperature rises, the umami comes to the fore. I'm going to miss going to "Tempura Takasan" so easily from now on... It was such a wonderful restaurant!

First, the No. 6 yeast. The aroma is moderate and fruity. You can also taste the acidity of the Niimasa type. The sweetness is moderate, and the umami and acidity are the main flavors. My wife detected the acidity similar to that of Shinmasa (❗️). It's true, if you ask me! It's a great wine! As the temperature rises, the bitterness slowly creeps in and reveals itself.

This one has a slightly less acidic taste and a vanilla-like aroma with a hint of richness and sweetness. In the mouth, it matches the image of the aroma.
