Yamamoto Junmai Ginjyo Genjyo No.7 Yeast
Then No. 7!
The aroma is fruity, different from No. 6, but I can't tell what it is.
On the palate, the sweetness and umami are balanced by the moderate acidity, which is balanced in a distorted way.
As the temperature rises, the umami comes to the fore.
I'm going to miss going to "Tempura Takasan" so easily from now on...
It was such a wonderful restaurant!

Good morning, Chichi! As I told you before, this store has a great selection. I am sure there are stores in Tokyo with a wide selection, but the prices are not cheap.
