We had a bottle of #Gisuke Tokusyu Unfiltered Unrefined Unrefined Sake from #Nara Toyosawa Shuzo in Nara City, Nara Prefecture. As the label on the back says, it aims to be the ultimate food sake, and has no outstanding characteristics that would interfere with a meal. It has a smooth mouthfeel with a soft umami of rice. The acidity was also moderate, so it would go well with Japanese food and sashimi.

Yesterday, we enjoyed #Hakuryu Junmai Hatsushibori from #Yoshida Shuzo in Fukui Prefecture with nabe dishes. The flavor was reminiscent of plums and prunes, yet it was crystal clear and very pleasant, and went down my throat easily. I could taste the flavor of the rice as well. Very tasty.

Tonight we are having homemade gyoza and a bottle of #Gichiki Junmai Genmai 50% sake from #Yamachu Honke Shuzo in Aisai City, Aichi Prefecture. It is said that it was brewed in 2006, and it has a very nice matured color 😆 It is very enjoyable as it shows many nuances such as the sweetness of rice like caramel, mirin and soy sauce. It goes well with the dumplings we are eating together.

I just bought a bottle of #Mizutaka Honjozo Hatsushiborisu (new sake) from Kumamoto City, Kumamoto Prefecture. I have had other new sake from other breweries in the past, and at the time, the flavor was fresh and guttural. I was expecting that kind of flavor this time as well, but while it was rich and fresh, it was softer and fresher than I would have thought possible at 19 degrees Celsius.

Tonight we had a sweet and gorgeous sake for the first time in a while. We had #Shinanotsuru Jungin Hatsushibori from #Choseisha in Komagane City, Nagano Prefecture. It has a gorgeous flavor reminiscent of apples and pineapples. It becomes juicier and more delicious when mixed with cage 😊. Our family's Christmas staple, fried chicken and macaroni salad.

We had #Hanagaki Junmai 65 Nigori from #Nanbu Sake Brewery in #Ono City, Fukui Prefecture. It's been a while since I've tasted hi-iri nigori sake, but it was so delicious that I drank too much. I drank it cold, but finished it before I had time to try heating it up. It was smooth as silk, and the natural sweetness of the rice was exquisite. The slight bitterness was not bothersome, and the cup was filled to the brim.

Nagatorogura Jungin Genshu La fusion from #Kobei Fujisaki Shoten in Nagatoro-cho, Chichibu-gun, Saitama Prefecture. At first I felt apple, then plum and cherry. I wonder if it is a blend of arabashiri and blame. It was a complex yet delicious sake with a sense of transparency 😊. I wish the local brewery, Saitama Prefecture, the best of luck.

Tonight, since we are having kimchi nabe for dinner.... I will have #Yoko Lemon from #Tate-no-kawa Sake Brewery in Sakata City, Yamagata Prefecture. It's not a substitute for makgeolli, but it's delicious. If you drink it right after taking it out of the fridge, the milk component is hardened, so you may want to shake it gently or mix it with soda or beer 😊.

Tonight we had #Sairai Jungin Unfiltered Nama Sake Usukiri from #Kitanishuzo in Ageo City, Saitama Prefecture. I am so proud that there is such a delicious sake in Saitama. It is delicious either as an acidic white grape-like sake or as a light nigori, which shows the flavor of the rice well 😊.

Tonight we had #Hououmida Hatsushibori-Jungin Unrefined Honkaku from #Kobayashi Shuzo in Oyama City, Tochigi Prefecture. I enjoyed it so much last year that I was determined to buy it again this year. The mellow taste with nuances of lychee and white grapes was perfect with sesame tangy hot pot 🫕.

Ibi-gun, Gifu Prefecture, #Ibi-gun, #Tokoro Shuzo's #Fusashimaya Junmai Super Dry Origaraumi. It's called "super dry" but due to the ogara-mi, it's not so much super dry as it is wonderfully sharp. It is packed with red-skinned grape-like flavor and very tasty. After drinking sweet sake for a while, I would like you to try this kind of umami sake next 😊.

I tried #Sawanoi Junmai Hiyoroshi from Ozawa Shuzo in Ome City, Tokyo. The sake is very smooth and the acidity stands out. When heated up hot, the sweetness and umami of the rice expanded and expanded. Very tasty 😊. #I'm toasting with salty fried fish from Kappa Kalaage Center.

Tonight we had #Senryo Otokoyama Jungin Yunokou from #Hishiya Sake Brewery in Miyako City, Iwate Prefecture, as yesterday. I had teriyaki mitsu for dinner, but it didn't go well with the gentle sweetness of this sake at all... The best match was sauteed spinach and shimeji mushrooms with smoked cheese. And the best match was takuan (pickled radish) with ume vinegar.

Tonight I had Iwate sake for the first time in a while. I had #Senryo Otokoyama Dry Honjozo from #Hishiya Sake Brewery in Miyako City with hand-rolled sushi for dinner. It has almost no aroma and does not spoil the sushi, but the delicious rice flavor matches the vinegared rice. It has a nice sharpness that makes both the meal and the sake more enjoyable. I ate raw fish for the first time in a while today, so I think I ate a little too much rather than drank too much.
