Last night we had #RingoPomPom from #Hachinohe Sake Brewery in Hachinohe City, Aomori Prefecture with kimchi nabe for dinner. 7% low alcohol with a pleasant apple-like acidity and I almost finished the whole bottle in one sitting 😆. It was very light and delicious!

Tonight I'm enjoying #Kitayasu Okuni Junmai Unfiltered Nama Zake from #Kitayasu Brewery in Omachi City, Nagano Prefecture, served cold or hot. It has a dried fruit aroma like prunes, and when cold, it has an image of mellow prune-like natural water. When heated, it has a more complex nutty flavor. I enjoy sakes that can be drunk at a wide range of temperatures.

Last night I had the first glass of #Tenranzan Jusui Shuzukumeshi Junmai Sake from #Igarashi Shuzo in Hanno City, Saitama Prefecture, served cold and the rest hot. The current mainstream sake is brewed with a ratio of 10 rice to 12 water, but this sake is brewed with the same ratio of rice and water. I found that this sake has a richer flavor. When heated, it tastes like "hot rice juice" and is very rich. It also has a dry and crisp taste. It was also good with sashimi. I'll buy it again at the direct sales place.

Tonight's dinner is a fried chicken parley night for some reason 🐓. I served it with #Houraisen Aged Nama Sake "Wa" from Sekiya Brewery in Aichi Prefecture. It is matured for a year in the brewery before being shipped, and this maturing process is amazing and makes it soft and smooth. It has a rich yet gentle sweetness, and the moderate acidity gives it a nice sharpness. It is a delicious sake that can be served chilled or on the rocks even though it is a Japanese sake. It's delicious!

Heated sake tonight as the north wind stings. I bought a bottle of #Kunigon dry junmai sake Benitefu from Minamiaizu-gun, Fukushima. I love this sake, and I think this is the fourth time I've bought it. It has a soft aroma reminiscent of prunes and plums, then the aroma changes to natural water and it quickly clears the throat, making it a very pleasant dry sake.

Tonight we had #Tenranzan Koryu Junmai Yamahai brewed by #Igarashi Shuzo in Hanno City, Saitama Prefecture. It has a soft lactic acidity from Yamahai without being harsh. It was very pleasant to drink. It's delicious and it will soak in on a cold night.

Last night we enjoyed #Misonotake, a rich, mellow, delicious sake from #Takeshige Honke Sake Brewery in Saku City, Nagano Prefecture. Various delightful nuances from aging, sweet and sour, prunes, plums, nuts.... We enjoyed it with bean sprout dandan nabe 😊.

Tonight we had #Shinkame sweet Junmai-shu from Hasuda City, Saitama Prefecture, which we purchased yesterday. The aroma is characteristic of junmai sake, with a bran, full-bodied aroma. At room temperature, the sweetness like sugar water comes to the fore. When heated up, the sweetness and umami of the rice came to the fore, but it was dry and crisp.

Okura Genryu Mizuhashiroshi Junmai from Kashiba City, Nara Prefecture. Unique sweetness and acidity. Honey, orange marmalade, apple.... The more I think about it, the more I feel various things about this sake. I wonder what it will be like when warmed or aged... I had it with Korean japchae, but I wonder if it would go well with apple pie or cinnamon-flavored pastries...

Tonight we had #Takejaku super-harakuchi Junmai Usu nigori Nama-zake from #Otsuka Shuzo in Ibi-gun, Gifu Prefecture. This was the first time for me to drink this type of Takejaku, and it was delicious and betrayed my expectations in a good way. It is supposed to be super dry, but it has a very crisp and clear flavor. It reminded me a little of Boshimaya.

We had a bottle of #Gisuke Tokusyu Unfiltered Unrefined Unrefined Sake from #Nara Toyosawa Shuzo in Nara City, Nara Prefecture. As the label on the back says, it aims to be the ultimate food sake, and has no outstanding characteristics that would interfere with a meal. It has a smooth mouthfeel with a soft umami of rice. The acidity was also moderate, so it would go well with Japanese food and sashimi.

Yesterday, we enjoyed #Hakuryu Junmai Hatsushibori from #Yoshida Shuzo in Fukui Prefecture with nabe dishes. The flavor was reminiscent of plums and prunes, yet it was crystal clear and very pleasant, and went down my throat easily. I could taste the flavor of the rice as well. Very tasty.

Tonight we are having homemade gyoza and a bottle of #Gichiki Junmai Genmai 50% sake from #Yamachu Honke Shuzo in Aisai City, Aichi Prefecture. It is said that it was brewed in 2006, and it has a very nice matured color 😆 It is very enjoyable as it shows many nuances such as the sweetness of rice like caramel, mirin and soy sauce. It goes well with the dumplings we are eating together.

I just bought a bottle of #Mizutaka Honjozo Hatsushiborisu (new sake) from Kumamoto City, Kumamoto Prefecture. I have had other new sake from other breweries in the past, and at the time, the flavor was fresh and guttural. I was expecting that kind of flavor this time as well, but while it was rich and fresh, it was softer and fresher than I would have thought possible at 19 degrees Celsius.

Tonight we had a sweet and gorgeous sake for the first time in a while. We had #Shinanotsuru Jungin Hatsushibori from #Choseisha in Komagane City, Nagano Prefecture. It has a gorgeous flavor reminiscent of apples and pineapples. It becomes juicier and more delicious when mixed with cage 😊. Our family's Christmas staple, fried chicken and macaroni salad.

We had #Hanagaki Junmai 65 Nigori from #Nanbu Sake Brewery in #Ono City, Fukui Prefecture. It's been a while since I've tasted hi-iri nigori sake, but it was so delicious that I drank too much. I drank it cold, but finished it before I had time to try heating it up. It was smooth as silk, and the natural sweetness of the rice was exquisite. The slight bitterness was not bothersome, and the cup was filled to the brim.

Nagatorogura Jungin Genshu La fusion from #Kobei Fujisaki Shoten in Nagatoro-cho, Chichibu-gun, Saitama Prefecture. At first I felt apple, then plum and cherry. I wonder if it is a blend of arabashiri and blame. It was a complex yet delicious sake with a sense of transparency 😊. I wish the local brewery, Saitama Prefecture, the best of luck.
