Tonight we had our Christmas tradition of fried chicken and macaroni salad, and #Fusashimaya Junmai Super Dry Orikarami from Ibi-gun, Gifu Prefecture. It is packed with just the right amount of sweetness and umami, so it doesn't feel dry. The flavor is like the sweetness of large grapes with red skin discounted. It is an excellent match for meat and fatty sashimi. It is a sake that will break your dry taste buds.

Tonight, #Wakamusume Junmai Unfiltered Nama Sake from #Shintani Shuzo in Yamaguchi City, Yamaguchi Prefecture, was served warm. Surprisingly dry and tight. As the label on the back says, it was made in December 2016, but I was able to get it at a reasonable price. Not much color, but it has the sweetness and sourness that I like, with a sense of maturity. It's a bottle and I will enjoy it cold or warmed for a long time 😊.

@Manachy. I checked and it looks like it was made before the current system of the brewery 😊It is very retro from the logo on the label. It was stored well in a certain liquor store's refrigerator, so it has not deteriorated.

We will be drinking #Aizu Nakasyo Hatsushibori Junmai Unfiltered Nama-shu from #Tsurunoe Shuzo, Aizuwakamatsu City, Fukushima Prefecture. It is not at all hard, even though it is the first pressing, and it has a mellow, even thickened taste. But it still has an aroma and freshness reminiscent of muscatel and melon. It is really delicious 😊.

Igarashi, Hanno City, Saitama Prefecture, #Igarashi Yamahai Junmai Naokumi. Light Yamahai, but deep and delicious. It is my favorite of the series. It has been stored at low temperature for several months in the brewery to further mellow it. It goes well with a pot dish or fried food with a strong flavor while sitting under a kotatsu (a table with a kotatsu over the fireplace).

Tonight we had #Houraisen Aged Nama Sake "Wa" Slightly Carbonated Version from #Sekiya Jozo in Kitashitara-gun, Aichi Prefecture. Originally, Houraisen matured sake for a year in the brewery before shipping. The brewery tried to add carbon dioxide gas to it afterwards. I was looking forward to seeing how it would taste, so I opened my mouth and was pleasantly surprised. The fine bubbles on the inside of the glass are nice. When I drank it, I found that it completely retained the softness and mild sweetness in the mouthfeel of aged nama-zake, while adding the slight bubbles that give it its freshness. No, this is appalling 😊. I thought it had all the current trends in sake: 1) a slightly fizzy taste, 2) a fruity aroma, and 3) sweetness. Oh, it was delicious. It went perfectly with his wife's stewed hamburger steak.

Tonight we had #Sasasamune Special Junmai Nigori from Kitakata City, Fukushima Prefecture. This is a favorite that I have been buying for the past three years. Very creamy on the palate with a slight bubbly taste. It goes down your throat smoothly. It is not so sweet and can be easily paired with nabe dishes, Chinese food, etc.

Last night we had kimchi nabe and this instead of makgeolli. I had a bottle of #Higashikishi Junmai Nigori from #Shimazaki Shuzo, Nasukarasuyama, Tochigi, Japan. 10% low al. Personally, I thought it could be a bit thicker, but it mellowed out the spiciness of the kimchi nabe and was very tasty 😊.

Tonight we had #Imanishiki Special Junmai Nakagawa Village Tamago Namaishu from #Yonezawa Shuzo in Kamiina-gun, Nagano Prefecture. I think it is my favorite in the #Imanishiki tadpole series 😊It has a sweet umami, moderate acidity, and a nice sharpness. It went well with meat and fried food for dinner tonight.

It's going to be a damp night tonight.... We are finally standing at the entrance of winter. ⛄️ Dinner at our house is Kiritanpo nabe, a specialty of Akita. Unfortunately, we can't drink Akita sake if that's the case. We had a bottle of #Hama Chidori Special Junmai Unfiltered Fire-brewed Sake from Kamaishi City, Iwate Prefecture in Tohoku. It's been a while since I've had a sake from Iwate Prefecture. The rice used was changed from Miyamanishiki to "Ginginga" from Iwate Prefecture. This sake is one of my favorite umami-guchi sake released every fall. It can be enjoyed cold or warmed up. It can be enjoyed at a wide range of temperatures. It can be served with a wide range of dishes, including nabe, sashimi, and meat dishes 😊.

Last night we had #Tsuchida 99 Junmai-shu UA version from #Tsuchida Shuzo in Tone-gun, Gunma Prefecture, served cold. It was sweet and sour at 14 degrees, and because it was made with #6 yeast, it was very clean and light. I was so thirsty after a hot bath that I was about to drink it as fast as a sports drink. Next time I would like to try it at room temperature or warmed up 😊.

As we had dried horse mackerel for dinner, we had #Hakushi Masamune #Hiramonora Junmai Sake from #Takashima Sake Brewery in Numazu City, Shizuoka Prefecture. Himonora" seems to be a character from Numazu. The sake has a delicious taste of rice and goes down your throat smoothly. It has no bitterness or sourness, so it is a sake that you can drink anytime without hesitation.

Recently purchased 3 bottles of #Imanishiki from #Yonezawa Sake Brewery in Kamiina-gun, Nagano. Tonight we had one of them, a zero magnetic field Junmai sake. It seems that the Bunge Pass in Ina City is a zero magnetic field area, and the sake was stored there for a winter to mature. If you are interested, please check it out as it seems to be a power spot 🤭. I didn't feel the sense of maturity so much, but the image is both mellow and light. It is not flashy, but rather understated, with a refreshing acidity that can be enjoyed with a meal.

We received #Hanaboe Yamahai Junmai Daiginjo Splash from #Miyoshino Shuzo in Yoshino-gun, Nara Prefecture. I enjoyed it so much that I decided to repeat it. I kept it in the fridge for a while so it was easy to open the bottle without spurting. It has a good balance between a fresh, strong fizziness and a lactic acidity with a moderate sweetness that makes it easy to drink 😊.

Tonight we had #Yuzu Junmai Daiginjo Happo-Nigori from #Kojima Sohonten in Yonezawa City, Yamagata Prefecture. It was quite rambunctious and took about 20 minutes to open the bottle, although it did not overflow. It has a very sweet aroma of koji, but it is not as sweet as the aroma, and it is crisp and dry. Personally, I like it very much in the sparkling nigori category 😊.

Tonight we had heated #Musashino Suisei No.436 Polishing 90%1 Polishing by #Asahara Sake Brewery in our hometown, Moroyama-machi, Iruma-gun, Saitama Prefecture. The price was 990 yen (tax included). In a word, it is a mild food sake. The aroma and flavor were flat without being overpowering, and it went well with the meal. I wonder if it will develop some character with time...

Tonight, I'm going to drink #Tokoroman, a sake from my hometown Tokorozawa. From this year? The name was changed from #Yumekoro. The label on the back says that the rice used is "Sai no Kizuna" (rice grown in Saitama Prefecture) instead of "Gohyakumangoku" (rice grown in Saitama Prefecture). I had the impression that the acidity was a bit harsh in the past, but this time it is a hiyaoroshi sake, so I thought it was smooth and mellow and tasty.

We will be having #Oaihei Special Junmai Genshu Oke67 from #Makino Shuzo, Takasaki City, Gunma Prefecture. As the label on the back says, it has a mild fruity aroma and a smooth mouthfeel that does not feel 17 degrees Celsius. It is as delicious as ever. I tried it warmed up a bit, and it was smooth yet juicy. It is also very sharp and very tasty.

Talkin' Loud and Sayin' Something by #Motosaka Sake Brewery, Taki County, Mie Prefecture This is the brand name of the brewery Hachibei Sake Brewery. The fresh sweetness and acidity, reminiscent of juicy apples, and the moderate bitterness finish pleasantly, destroying the image of Hachibei Sake Brewery in a good way. The low-alcoholic taste of 14 degrees Celsius also helps the ease of drinking 😊.
