Ingredients: rice (domestic), rice malt (domestic), rice polishing ratio: 55%, sake meter: +3.0, acidity: 1.3, alcohol content: 15-16%.
It has a good balance of a slightly refreshing yet mellow taste. It has sweetness, umami, and a smooth taste. It is easy to drink and has a light umami and acidity. Refreshing ginjo aroma like Japanese pear and citrus. Convergence is quite refreshing.
Bought it at a store I found on the way to Shimoda.

It has been a long time since Shida Izumi's last visit.
Recently, I found a Shidaizumi I had never seen before at a liquor store I often visit. I had no choice but to buy it. Dinner that evening was the first Akitagami fish of the year. I opened a bottle of Shidasen, which I had just bought, because it was the only sake I could drink.
The swordfish was delicious, and so was the Shidaizumi.
