Tonight we had #Shitaizumi Yamadanishiki Funeshibori from Fujieda City, Shizuoka Prefecture with tempura and bamboo shoot rice. It's a raw regular sake with a soft banana-like aroma and a very good flavor. 18℃ makes it easy to pair with food and get drunk with it.

We had a bottle of #Wakamusume Junmai Unfiltered Nama Sake from #Shintani Shuzo in Yamaguchi City, Yamaguchi Prefecture. I found this sake manufactured in December 2015 at a certain liquor store and picked it up without hesitation. It definitely has a matured taste. The caramel-like sweetness and moderate acidity made me feel like I was smelling something.

Tonight we are toasting with #Kitajima Junmai Mizukagami Orikagami Nama from Konan City, Shiga Prefecture. It has a refreshing aroma like sugared grapefruit, and its mellow flavor fills the mouth with a slightly effervescent sensation. The acidity of 2.3 makes it very crisp. Very tasty 🤤.

Last night we enjoyed #Aizu Nakasyo special junmai light nigori sake from #Tsurunoe Shuzo in Aizuwakamatsu City, Fukushima Prefecture. It has a fresh aroma like a young green melon and a mellow flavor. It is not too sweet and has a nice crispness. It is very delicious. The photo shows only the supernatant portion of the first glass.

Tonight we had #Keihoueikiku Tsukishita Muyori Unfiltered Nama Sake from Ogi City, Saga Prefecture. It's been a while since I've had a Koei Kiku, but it was lighter than the ones I've had before. It reminded me frankly of Gatorade and grapefruit from sports drinks. I also felt a little wooden vat-like nuance. It was refreshing and easy to drink though 😊.

Tonight we had #Boshimaya Usagi Shin BLACK Gohyakumangoku from Tokoro Shuzo, Ibi-gun, Gifu Prefecture. It has a delicious rice flavor similar to the sweet grape juice feeling, and the bitter bitterness of grape skins finishes it off pleasantly. It is very tasty and crisp. It went perfectly with the raisin-filled Sakekasu cream cheese.

We got #Imanishiki Shiboritate Junmai Unfiltered Nama Sake from #Yonezawa Sake Brewery in Nakagawa Village, Kamiina-gun, Nagano Prefecture. I think this is the 4th time I've had it 😊. As usual, it has a mellow flavor like white grapes. The mouthfeel is slightly thickened and the sweetness is moderate. I also felt the slight sparkle was moderate. It is a stable deliciousness♪

Tonight, I decided to have a side dish of mackerel simmered in miso with yuzu (Japanese citron), so I chose #Shin Tsuchida Junmai from the #Tsuchida Shuzo brewery in Kawaba-mura, Tone-gun, Gunma Prefecture. The aroma is pleasant and refreshing apple cider vinegar. The first sip of this wine has a caramelized taste that follows the image of apple cider vinegar. I lightly warmed it up, but I prefer it at room temperature.

Sake Diary 666 Even though it's spring, the mornings and evenings are still a little chilly, so warmed sake is delicious. This is #Bentenmusume Blue Label from #Ota Sake Brewery in Hachigashira County, Tottori Prefecture. This is my first time drinking #Bentenmusume, but it doesn't have that dryness that I don't like so I can keep drinking it slowly 😊.

Tonight we had #Hanaboe Yamahai Junmai Daiginjo Splash from Miyoshino Brewery in Yoshino-gun, Nara Prefecture. It took about 10 minutes to open and close the bottle repeatedly to release the gas. The flavor is like a combination of Calpis soda and makgeolli, with a freshness that is enhanced by the effort. It goes great with pudae jjigae, a Korean dish 😆.

Tonight we enjoyed #Sakaya Hachibei Junmai Unfiltered Nama-shu from #Motosaka Shuzo in Taki-gun, Mie Prefecture while watching the WBC on TV. It had been in the refrigerator of a certain liquor store for more than 3 years. It is really delicious with complex flavors such as nuts and dried fruits, both cold and hot. I will drink it with care 😊.

Last night we had #RingoPomPom from #Hachinohe Sake Brewery in Hachinohe City, Aomori Prefecture with kimchi nabe for dinner. 7% low alcohol with a pleasant apple-like acidity and I almost finished the whole bottle in one sitting 😆. It was very light and delicious!

Tonight I'm enjoying #Kitayasu Okuni Junmai Unfiltered Nama Zake from #Kitayasu Brewery in Omachi City, Nagano Prefecture, served cold or hot. It has a dried fruit aroma like prunes, and when cold, it has an image of mellow prune-like natural water. When heated, it has a more complex nutty flavor. I enjoy sakes that can be drunk at a wide range of temperatures.

Last night I had the first glass of #Tenranzan Jusui Shuzukumeshi Junmai Sake from #Igarashi Shuzo in Hanno City, Saitama Prefecture, served cold and the rest hot. The current mainstream sake is brewed with a ratio of 10 rice to 12 water, but this sake is brewed with the same ratio of rice and water. I found that this sake has a richer flavor. When heated, it tastes like "hot rice juice" and is very rich. It also has a dry and crisp taste. It was also good with sashimi. I'll buy it again at the direct sales place.

Tonight's dinner is a fried chicken parley night for some reason 🐓. I served it with #Houraisen Aged Nama Sake "Wa" from Sekiya Brewery in Aichi Prefecture. It is matured for a year in the brewery before being shipped, and this maturing process is amazing and makes it soft and smooth. It has a rich yet gentle sweetness, and the moderate acidity gives it a nice sharpness. It is a delicious sake that can be served chilled or on the rocks even though it is a Japanese sake. It's delicious!

Heated sake tonight as the north wind stings. I bought a bottle of #Kunigon dry junmai sake Benitefu from Minamiaizu-gun, Fukushima. I love this sake, and I think this is the fourth time I've bought it. It has a soft aroma reminiscent of prunes and plums, then the aroma changes to natural water and it quickly clears the throat, making it a very pleasant dry sake.

Tonight we had #Tenranzan Koryu Junmai Yamahai brewed by #Igarashi Shuzo in Hanno City, Saitama Prefecture. It has a soft lactic acidity from Yamahai without being harsh. It was very pleasant to drink. It's delicious and it will soak in on a cold night.

Last night we enjoyed #Misonotake, a rich, mellow, delicious sake from #Takeshige Honke Sake Brewery in Saku City, Nagano Prefecture. Various delightful nuances from aging, sweet and sour, prunes, plums, nuts.... We enjoyed it with bean sprout dandan nabe 😊.

Tonight we had #Shinkame sweet Junmai-shu from Hasuda City, Saitama Prefecture, which we purchased yesterday. The aroma is characteristic of junmai sake, with a bran, full-bodied aroma. At room temperature, the sweetness like sugar water comes to the fore. When heated up, the sweetness and umami of the rice came to the fore, but it was dry and crisp.

Okura Genryu Mizuhashiroshi Junmai from Kashiba City, Nara Prefecture. Unique sweetness and acidity. Honey, orange marmalade, apple.... The more I think about it, the more I feel various things about this sake. I wonder what it will be like when warmed or aged... I had it with Korean japchae, but I wonder if it would go well with apple pie or cinnamon-flavored pastries...
