The fresh sweetness and acidity, reminiscent of juicy apples, and the moderate bitterness finish pleasantly, destroying the image of Hachibei Sake Brewery in a good way. The low-alcoholic taste of 14 degrees Celsius also helps the ease of drinking 😊.

Today is 10/1 Sake Day, rugby is in full swing, so let's toast with #Hama-Chidori Junmai Nama-Shu Usu Nigori from Kamaishi City, Iwate Prefecture 😊. The slight gasiness, banana-like full flavor, and crisp finish make this a sake worth looking forward to every year. The rice used for this sake is Ginga no Shizuku, which is also delicious to eat. It is my favorite sake.

Tonight's toast is #Bunkajin Jungin Obake Label from #Arisawa Shuzo in Kami City, Kochi Prefecture. It's finally a summer sake, but it was a bit hot and humid today, so it's nice and refreshing. It has a sweet and greeful taste with a pleasant bitterness to finish it off. I had miso tanmen with lots of vegetables for lunch, and afterwards I bought some sake that I was not familiar with.

I had a bottle of #Ohaii Jungin Chugin Summer Punch from #Makino Shuzo in Takasaki City, Gunma Prefecture. The description says "refreshingly delicious", which is a perfect description. It has the lightness of a summer sake, but now that the weather has finally cooled down, I think this sake is best served cooled after a bath. It is a refreshingly light summer sake, but now that the weather has finally cooled down, I think this is the best way to drink it after a bath.

Cheers to #EikoFuji Dry Junmai Sake Asterisk from Fuji Shuzo in Tsuruoka City, Yamagata Prefecture. The aroma and flavor are both mild. As the label on the back says, "No peculiarities, just like melting snow..." It is a sake that goes down easy. It can be served with any kind of food.

It has a light bitterness like astringent peel that accents the refreshing sweetness of grapefruit.

We received #Monkaifude Special Junmai Sake from #Nishibori Sake Brewery, Oyama City, Tochigi Prefecture. The sweet and refreshing aroma is soft, the rice flavor and richness spreads, and the sharpness goes down your throat easily. It would go well with sashimi. It would be interesting to warm it up or age it.

Tonight we had #Mimuro-Sugi Bodai-Hashiroshi from #Imanishi Sake Brewery in Sakurai City, Nara Prefecture with the leftover tempura from last night. It was a gift, but I didn't know it was a 13% sake until I opened it. It has a light sweet and sour taste with a complex flavor deep inside. It also has a slight chiri-chiri-ness, and if you are not careful, you can easily drink it.

Tonight we had #Hakuryu Autumn Mature Unfiltered Nama Sake from #Yoshida Shuzo in Eiheiji-machi, Yoshida-gun, Fukui Prefecture. It is an autumnal sake with a strong flavor, so we drank it on the rocks with a lot of ice. The ice melted the sake and it became easy to drink and tasty.

Tonight I'm drinking #Awago-Tsuki Jusan-no-Yoru Special Junmai Orikagarami Nama-Shu from #Aihara Shuzo in Kure City, Hiroshima Prefecture. I've had this every year, and while it's only 13 degrees, I get the impression that the flavor is getting stronger and stronger. It has a strong sense of gas, which is unique to orikagarami, and the flavor is full of umami. It is delicious now that the weather is getting hotter.

Shinshu Kamerei Junmai Shu Hitogokochi from Okazaki Shuzo in Ueda City, Nagano Prefecture. It is very fresh with a slight effervescence. The moderate sweetness is very fruity. I suppressed my desire to drink a lot and finished with about 120 cc. But, oh my, it was delicious!

Tonight we are toasting with #Horinoi Junmai Daiginjo Ginga from #Takahashi Sake Brewery in Shiwa-gun, Iwate Prefecture. I love this sake, though #Murasakiu from the same area has been the talk of the town lately. It made me fall in love with Iwate sake. It has a nice richness with the sweetness and umami of rice, and it is refreshing and clean. And the best thing is that it is reasonably priced. ☺️

Tonight we had #Dan Yamahai Junmai Ginjo Bizen Omachi from #Sasaichi Shuzo in Otsuki City, Yamanashi Prefecture. It has a gaseous, chirichiri-y feeling. It has an aroma of matured prunes, and the flavor explodes on the palate. It was the first time in a long time that I had a "yum" moment in my mouth. It blends well with grilled meat and is easy to drink without much of the Yamahai flavor.

Tonight we received a gift, but it has been a while since we have had sake from Iwate Prefecture. We received #Washio Junmai Ginjo Yukinotsuki from Hachimantai City, Iwate Prefecture. Depending on the year, the sake rice used may be Miyamanishiki, Yamadanishiki, or Yunokoh, but I don't know what rice was used for this sake. The rice polishing ratio is also not listed, but I don't care at this point. ☺️ The aroma is mild and the mouthfeel is smooth. However, the moment you put it in your mouth, the sweetness and umami of the rice spreads out in a flash. It also had a unique sourness to it, in a good way, so it matched the sourness of the Gouda cheese and cherry tomatoes I served with it. ☺️ It was the first time for me to taste such a delicious rice flavor.

As usual, it has a fresh, rammy taste, and the gasiness of the direct pumping is really refreshing. It is so consistently delicious that I buy it every year.

Tonight we had #Odayaka Nigita Honke's #Odayaka Nigita Jungin Thin Nigori in Koriyama City, Fukushima Prefecture. The refreshing lactic acidity makes it a refreshing adult Calpis soda. It has just the right amount of sweetness and a strong flavor. The slight sparkle also helped me enjoy it very much. It is really a delicious sake.

Tonight, we are toasting with #Houraizumi Kasumizuki Junmai Nama-no-Genshu from #Sekiya Jozo in Aichi Prefecture. It is a dry junmai sake that you can drink every day and not get tired of it. I've had it with squid sashimi, but it seems to go well with edamame, chilled tofu, and other snacks. ☺️ When the blue bottle comes out, it is the season for summer sake.
