It has a unique mellowness and a crisp acidity. The combination of this and the gasiness makes it very tasty. The flavor of grapes with red skin has a sweetness that has been stripped away. It would go well with fatty sashimi and meat dishes 😊.
This is #Horimai Junmai Sake from #Takahashi Sake Brewery in Shiwa-gun, Iwate Prefecture, Japan. It has a rich rice flavor, sweet and sour, and is very delicious served cold. It is neither sweet nor spicy, but well balanced, and I have a feeling it will definitely be delicious heated up.

It has umami, acidity, and a moderate astringency that tightens and finishes with a kick. There is a slight bubbling on the tongue, which gives it a freshness.
It went perfectly with vegetable-centered tempura and zaru-soba noodles 😊.

I had this brand hot sake at a small restaurant in Nagoya the other day. I found it in the sake section of Takashimaya near Nagoya station. The label on the back of the bottle said that it gets sweeter when heated, so I bought it, believing that this must have been the right sake.
Well, well, well...
I think I must have drunk this sake. I warmed it up to hot and waited for it to cool down to about room temperature. Take a sip.
Ah, there is no doubt...this is the flavor.

Dinner was pork and fried chicken, so this hot sake tastes great.
This sake has been aged for about 6 years. It has a golden color when poured into a sake cup. This alone makes me smile, as I love aged sake.
A sip at room temperature...ah, you can tell right away that this is definitely a delicious sake when warmed.
Now, to heat it up. The sense of maturity and the fullness of Omachi rice fills the mouth.
