My first sake. Yamanoi Asahi Junmai Daiginjo from #Aizu Sake Brewery in Minamiaizu-gun, Fukushima Prefecture. The aroma is mildly citrusy, with a slight fizziness and a slight thickening. The flavor is refreshingly citrusy and citrusy, and went perfectly with the chanko-nabe with yuzu-flavored tsumame (sweet potatoes) 😊It's fresh, soft, and delicious.

When I first started drinking sake, I was told about this brand and bought one myself. It is the best in that it is light but fruity like grape and has a delicious taste.

Ibi-gun, Gifu Prefecture, #Tokoro Shuzo's #Boshimaya Usagi Shin BLACK Unfiltered Nama-shu Ginbuki. It has a unique mellowness and a crisp acidity. The combination of this and the gasiness makes it very tasty. The flavor of grapes with red skin has a sweetness that has been stripped away. It would go well with fatty sashimi and meat dishes 😊.

This is #Horimai Junmai Sake from #Takahashi Sake Brewery in Shiwa-gun, Iwate Prefecture, Japan. It has a rich rice flavor, sweet and sour, and is very delicious served cold. It is neither sweet nor spicy, but well balanced, and I have a feeling it will definitely be delicious heated up. Congratulations to HORIME on his gold medal in the skateboarding street at the Paris Olympics.

This is one of the sakes I look forward to every summer. It is #Ugonotsuki Junmai Ginjo Slightly Sparkling Nigori Nama Sake by #Aihara Shuzo, Kure City, Hiroshima Prefecture. Be careful not to blow out when opening the bottle. It has a refreshing Calpis soda-like aroma with a light sweetness and a refreshing taste. The slight fizziness makes it easy to drink even during hot weather. I remember it was a bit sweeter a few years ago, but it has changed over the years to a refreshingly dry impression. I feel that it is now easier to drink with meals.

Kure Special Junmai Hana Kappa from #Nishioka Shuzo in Takaoka-gun, Kochi Prefecture. It is sharp and dry, but has a melon-like aroma and umami flavor, so it tastes good even with a lot of ice. Last year, I thought I felt a medicinal smell when I opened my mouth, but this year's is even mellow and delicious. However, it is indeed 19 degrees Celsius, which makes it intoxicating.

Tonight, we will toast with a local sake from Saitama Prefecture. Igarashi Junmai Namaishu Naokumi from #Igarashi Sake Brewery in Hanno City. The flavor becomes richer as the temperature rises a little from its perfectly chilled state. It has a crisp, dry and sharp taste with a refreshing lemon and citrus-like freshness. It is easy to drink even in hot weather when it is this sharp while feeling the umami of the original sake 😊.

I was going to take a day off from drinking tonight, but my wife told me she had yakitori, so I reluctantly decided to have a drink 🤭. We had #Okubarima Yamahai Junmai 80% Polishing from #Shimomura Sake Brewery in Himeji City, Hyogo Prefecture. The soft lactic acidity spreads in the mouth. The light bitterness accentuates and tightens the taste, and it crisply drains away the dark flavor and fat content of the yakitori. And then another bite of yakitori...the repetition naturally continues.

I bought this #Oaihei Junmai Ginjo Spring Shibori from #Makino Shuzo in Takasaki City, Gunma Prefecture, because I enjoyed it so much 2 years ago. I opened it 3 days ago and felt it was still young, so I waited. This was the right decision. It was sweeter, softer on the palate, slightly effervescent, and fresh with a hint of grapefruit.

Hamachidori Special Junmai Sake from Kamaishi City, Iwate Prefecture, is my favorite sake that I have been drinking for about 5 years now. The rice used has been changed from Miyamanishiki to Ginga since last year. It has a good balance of sweetness, acidity, and umami, and has a very deep flavor that reminds me of whiskey or brandy. I drank this sake cold, but it is also delicious warmed.

We received #Washinoo Shirawashi Junmai Namaizu Oragarami from Hachimantai City, Iwate Prefecture. It is a PB product of a certain store in Morioka city. It has a refreshing lactic acid aroma and a juicy sourness reminiscent of yogurt. It is full of freshness that is typical of nama-zake. I heard that it is already sold out, and I would like to purchase it again for the next release. *Do you know what the brushstroke on this label says? 💦.

It has umami, acidity, and a moderate astringency that tightens and finishes with a kick. There is a slight bubbling on the tongue, which gives it a freshness. It went perfectly with vegetable-centered tempura and zaru-soba noodles 😊.

We received a bottle of #Kido Junmai Ginjo Haru no Kaorufu from Heiwa Shuzo in Kainan City, Wakayama Prefecture. The bottle and label design are very spring-like. ☘️ Soft sweet aroma, gentle sweetness, and a fresh taste with a slight bubbly sensation on the tip of the tongue. The taste is fresh with a light sourness followed by a hint of bitterness. It is a delicious sake that is light but has a good taste. It would go well with spring vegetable tempura or white meat sashimi.

We had #Ibi-gun, Gifu Prefecture, #Tokoro Sake Brewing Company's #Boshimaya Usagi Kokoro BLACK Gohyakumangoku with stewed hamburger steak. It is full of flavor like large red grapes. It is very tasty with a slight bubbly taste. It has a nice sharpness, so I think it goes well with fatty sashimi. I think it is a unique sake that can be matched with both Japanese and Western cuisine.

We received a bottle of sake from our hometown Kawagoe City, Saitama Prefecture. #It is #Kagamiyama Junmai Shiboritate from Koedo Kagamiyama Shuzo. It has a fruity flavor reminiscent of a mellow melon, yet it is refreshing and easy to drink. It's still cold, so drinking cold sake while warming up with a kotatsu (table over the kotatsu) is a special treat.
