It's been a long time since I've been to Shinsei Viridian! Aroma reminiscent of citrus acidity. Sweet and sour but beautiful taste. It is still delicious. I want to drink it slowly and carefully, but it is so easy to drink that I am afraid I will drink too much.

This is another brand of Kangiku, which seems to be distributed only in Chiba Prefecture. I saw it at a mail order shop of a liquor store, and since I love Kangiku, I decided to buy it. From the aroma, it is already different from Kangiku. It has a very subdued atmosphere and almost no aroma. It tastes dry, too, and the direction is so different that it is hard to believe it was made by the same brewery. While Kangiku is sweet and fruity, Matsuo's is deliciously dry. However, it also has a softly spreading sweetness. Both have a strong body, but Matsuo Jiman is better suited for a medium-bodied sake. I would like to visit Chiba next time and stock it.

I was attracted by the straightforward name. I thought it would be a classic type, but the aroma was unexpectedly fruity. Slightly cereal. The taste is dry and has a heavy drinking experience. The dry aftertaste and the alcohol taste that comes with a twinge give you the feeling that you are drinking sake! It feels like you are drinking sake. However, it has a deep umami flavor, and strangely enough, you will not get tired of drinking it. It has a modern, umami, spicy taste, and is perfect as a food sake!

I picked up a bottle because of the cool packaging and the elegance of the name. I want to keep the bottle even after I finish it. The aroma is of pineapple and mango. The aroma is pineapple and mango, with a hint of fresh grassland. The taste is sweet and juicy with a modern flavor, but the change from the mid-palate is quite unique. The rich flavor spreads and it is like butter. It is an interesting sake. The problem is that it is sold only in a limited number of places, but if I see it again, I'll buy another spec.

The 300th check was made at Sairai! This is my favorite brand, so much so that I can say that it is now in the Hall of Fame. The aroma is fruity with a little acidity. It is citrusy like lemon or grapefruit. The first attack is a rich sweet juicy taste. The thick-bodied taste spreads gorgeously and finishes with a sense of alcohol and bitterness on the nose. It is a beautiful sake no matter when you drink it. As the temperature rises a little, it becomes lighter, and a refreshing acidity appears. I am going to enjoy Sairai to the fullest again this year!

Like the UA snowman, it still blew out. Since it blew out even though it had been in the fridge for over a month, I still think it needs an air vent stopper. The aroma is green apple and sour citrus. Of course, it is full of gas, but a little less sweet for a kijo-zake. Nevertheless, it is definitely sweeter than the UA Snowball and has a rich yet refreshing aftertaste. It is no longer a wintertime tradition, but rather a good luck charm based on the label's design. It may be a good indicator of one's sake life.

This bottle is brewed by Noguchi Sake Brewery, which has resumed sake brewing after an absence of about 40 years. I am very happy to be able to witness this kind of revival, starting with Iraka in Nagano. The aroma is quite mild. The flavor is dry and well balanced. The taste is dry and has no distinctive character, good or bad. Let's leave it for a while! Postscript After one night. It has a refreshing, herbal-like freshness to it. It tends to disappear when drunk after sweet and fruity sake, so it is a good idea to drink it early.

Bunraku is another brand of Kitanishi Shuzo, which brews my favorite Sairai. I chose it because I had never had it before. The aroma is citrusy and acidic, and at this point, it has a different character from the sweet and delicious Sairai. The first attack is also acidic, and the light body gives the impression of being quite sharp. However, it also has umami and sweetness, and is very drinkable. Although it tastes completely different from Sairai, it is a bottle with a very high degree of perfection. Personally, I thought it might be similar to Senkou before it went back to Edo. I thought it might be similar to Sentori before it returned to Edo.

I was going to keep it for a while, but for some reason I opened the bottle of Tasake no Daiginjo. Aromas of mango and pineapple. It is already delicious at this point. This is a bottle of sake that is both modern and old-fashioned. It is too delicious.

A new bottle was available from QA, the most recommended brewery, so I bought it without hesitation. It is a sake for warming up, but I first served it chilled. Almost no aroma. It is very light in the mouth, with a salty acidity that arrives at the end. Well, to be honest, I don't like it when it's cold. Then, let's try it warmed. It has a clear body and is very drinkable. The acidity in the aftertaste has a lactic acidity characteristic of QA. However, it is still not my favorite. We are looking forward to another new bottle.

Sentori, sparkling Edobari. Aroma of Japanese pear. The mouthfeel is quite refreshing and full of gas. The sweetness, umami, and acidity are relatively low, but it is full of minerals. Postscript It was hard to tell because the bottle was black, but it seems that oli had accumulated at the bottom. After the second glass, the wine has a firm outline and tastes like the soil it was produced on.
