My personal favorite QA. It was not to my liking from the last umma, but how about this tsuchi-kiku. The aroma is clear and fresh, with a hint of sourness. A hint of apple. The taste is clear and watery. The sourness is felt only at the moment it enters the mouth, but it disappears quickly after that. Sake from this brewery should probably be enjoyed with the awareness of drinking tradition, policy, and the like. I sense that it is becoming somewhat refined, and I look forward to seeing how it will change again in the future.
