This is one of my favorite Daishinshu series, especially the field-specific brewing series. There is also a nama-shu version, but this one is fire-aged. It has a clean quality that is typical of Nagano sake, with a robust flavor. It also has a calm atmosphere, making it great as a food sake! We only have one bottle, but I buy it!

It's been quite a while since I last drank a sake, but it's still delicious! It is fire-brewed, yet it has this freshness. The regular version can be found in supermarkets, so there must be many people who have become sake lovers after drinking Saku.

When I heard "Yamahai," I imagined it would have a punchy atmosphere, but it is surprisingly mild. Nevertheless, it is full-bodied and has a great umami flavor, making it a Yamahai that is popular with everyone.

I think chrysanthemum is delicious after all. I feel like I think that every time. It is sweet and juicy, well-balanced, and not tiring to drink at all. I might try to compare drinking only Kangiku someday.

I was so happy to beat Brazil that I also opened a bottle of Yamazan! Yamazan has a light, fruity image, but this one made with Kinmon-nishiki is quite robust. I was a bit surprised by its low center of gravity and dense atmosphere. Nevertheless, the fact that this sake does not tire one's palate is a true testament to its quality. It is a dangerous one that can be enjoyed with strong-flavored snacks for a long time! Postscript After a night of drinking, the fruity atmosphere that is typical of Yamazan came out!

Celebration! Brazil defeated! I just want to drink sake on the occasion of such an important event! That's why I opened a bottle of Akabu's MONSTER! The aroma is like ripe apples, and the taste is sour and sweet like apples. This season's MONSTER has a strong acidity, and I couldn't help but say, "It's sour! I couldn't help but say "sour! I guess it is a fall sake, but it has almost none of the calmness of hiyayogoshi. Well, the beautiful sake of victory is good, good, good!

It has the strength of an unfiltered, unpasteurized sake. The mouthfeel is smooth and reminiscent of Omachi. It has a richness reminiscent of classic sake, but it also has a nice accent. The appearance was rather modern, but this is a very drinkable bottle.

Red dragonflies are an autumn tradition at Senkyo! When they are out, I still buy them! I drank it right away, and my first impression was, "I didn't know it tasted like this. I was surprised to find that it tasted like this. It sounds good to say that it tastes calm, but I felt it was just a light sake with a sour taste. Even if it were called a summer sake, you might not be able to tell. Let's leave it for a while and see how it goes.

The 500th check to commemorate the event was the Nananouzou brewery in Sancho! I have had up to Roku-no-brewery, but this is my first time to try Nanashin. The aroma is of LaFrance and Muscat. It is full of gas and has a clean sake quality, but the umami sweetness stands out and it is always delicious. I think it is sweeter than the Ni-no-kozo I drank a few months ago. The highest sake produced in the region is called "Junishi," and I would like to try that one day.

I always love Haneya for its elegant taste, and this MOONLIGHT BEAUTY is one that is both elegant and powerful. Perhaps because it is made from Omachi, it has a thicker core and is very drinkable. But it is beautiful and elegant, and you will not get tired of drinking it at all. The lingering aftertaste is also pleasant and makes you want to savor each sip slowly.

This bottle is a cross between Anastasia Green and Dusk Orange, a collaboration in the brewery, not an in-house collaboration. Both are my favorite sake, so I'm looking forward to seeing how they taste! The aroma is citrusy with a hint of fresh green. I can't help but feel that I'm being pulled in by the name and the atmosphere of the label, but that's part of the fun, you know. The taste has a sweet sudachi-like atmosphere. It is very well-balanced, with citrusy sweetness and acidity while giving a sense of freshness. I would love to see more collaborative efforts like this in the future. Individuals could try mixing Anastasia Green and Dusk Orange, maybe?

This is an unusual autumn sake that has been aged for about six months. Personally, I can't let my sake mature, so I am very grateful that the brewery is doing this for me! The taste is relatively light, as one would expect it to be more robust. Perhaps it is because the rice is Hachitan-Nishiki, but it even tastes light. However, it also has a sense of weight, and a nutty savory taste spreads afterwards. As the label says, it is best served with cheese!

The theme of this year's Erwolf is Secret, and you can enjoy one in which every spec is a secret. These days, when we look at various things with colored glasses, this kind of thing is also good! Now, there is almost no aroma. Faintly citrusy, like lemon. The body is light, with a strong acidity. However, from the mid-palate, the flavor is plump and delicious, with a strong bitterness at the end. When you drink it like this, you can feel how difficult it is to guess what kind of specifications it has.

As it is 10/1 Sake Day, we opened a special bottle of Nichi-Ni✕San-Do! It is a dream come true to enjoy this collaboration! The nose has a light acidity reminiscent of grapefruit and muscat. The taste is so clean and refreshing, and so free of any cloying flavors, that you may forget you've been drinking sake. Nichinichi is a bit expensive, but that is why it is perfect for special occasions!

The best of the best, thick-core yet modern, juicy, and highly drinkable! For what it's worth, I think I may like Oumine the best. I guess there is not much else like the sensation of having the umami and sweetness spread out in your mouth without a moment's pause. Omine also has the best unfiltered unpasteurized new sake, so I am looking forward to it too much!
