The sweet flavor spreads and juiciness is what they call it! The mouth is filled with a fruity flavor. It has a cloudy, slightly carbonated taste, and feels like a very high quality tin sound. The sweetness becomes more pronounced as it gets tepid, but it doesn't get too heavy, and the aftertaste is still refreshing... It was a really good sake.

Special Junmai Sake Polishing ratio 60 Alcohol 15%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions This Yamano Kami is said to be made with yeast from the flowers of the sasa lilies found in the sacred grounds of the Ogami Shrine at the foot of Miwasan. The water, rice and yeast are all from Nara! The owner recommended it to me as a taste of Nara. Slightly refreshing aroma! When you put it in your mouth, the alcohol taste goes away and you think it's dry, but soon the fruity taste spreads! The fruity taste lingers in the aftertaste, but it is not harsh or unpleasant.

Junmai Daiginjo Polishing ratio 45 Alcohol: 16%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impression Purchased at a local liquor store earlier this spring Gorgeous aroma with sweetness. Fresh sweetness fills the mouth immediately with a slight sourness. The aftertaste is slightly spicy and refreshing. Seems to go well as a food sake. When I drank it with Nameko, the flavors enhanced each other and it was great!

Junmai Ginjo-shu Rice polishing ratio 55 Alcohol 15%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impression Purchased at a local liquor store earlier this spring. I've been waiting for the right moment to drink it for a long time and recently I finally opened the bottle. Dry at first, sweet in the middle, with a clean aftertaste. I love the bitterness that lingers in the right amount. The freshness of the sake, as if it were still fresh, even though it is fire-aged, is as expected of Saku!

Sake degree: Unknown Personal evaluation: ★★★★★ Impressions At an izakaya in Nara Prefecture (I forgot to take a picture) It was so delicious that it made me think that all the doburoku I have ever had were fake! It may be doburoku, but my personal recommendation is the best ever! The fresh aroma is irresistible! The graininess of the rice remains, and it has a creamy mouthfeel like doburoku, but thanks to the fizziness, it is refreshing and has no unpleasant aftertaste at all! I used to dislike doburoku, but if it's this good, I'll want it every time... Imanishi Shuzo brews the sacred sake of the Ogami Shrine, and this nigorosugi muddy sake is a reproduction of that sacred sake. That is why it is said to be real muddy sake. I am happy to drink such a great sake!

Sake degree: Unknown Personal Rating: ★★★☆☆☆☆ Impression At an Izakaya in Nara Prefecture (forgot to take a picture) It has a stronger melon taste than Yamadanishiki. I was told that it also has a strong acidity and bitterness, but I think it was all hidden by the melon flavor. This sake also has a slightly carbonated taste and is easy to drink. The Kaze no Mori series may be recommended for sake beginners, as it has a completely different flavor from the sake available at mass retailers.

Slightly carbonated taste, combined with the melon flavor, makes this sake very easy to drink. Although the alcohol taste is not so strong, the melon taste may be a little different for different tastes. The aftertaste is slightly sour, which is typical of sake.

It is very easy to drink! The moment you take a sip, the umami flavor spreads and the aftertaste is light! It has just the right amount of acidity to make it an easy-drinking sake! I guess it goes well with any meal! Even my wife, who is not a fan of sake, liked it so much that she asked for more! I can see why this sake is so popular!

Sake degree: Unknown Personal Rating Impression At an izakaya in Nara Prefecture (forgot to take a picture) The sake was brewed in a wooden vat, and the color of the vat made it smell like drinking from a wooden wooden sake cup, even though it was drunk from a ceramic cup! The flavor of the sake was good, of course, but the aroma spread strongly to the taste, and I felt a slightly peculiar sourness. It might have tasted better if it had been heated.

I wonder if this is the unique taste of Yamahai. Contrary to the acidity, the mouthfeel was fine and there was a faint sweetness in the aftertaste. It is not the first sake I would drink, but I would like to drink it after a few glasses.

Sake Degree: +2 Personal Evaluation:★★★★★ Impression Although it has a sake strength of +2, it has a fruity taste with a sweet aftertaste. It has a mild and easy-drinking mouthfeel. Takagi Shuzo also produces the famous sake Jyushiyo. Since Asahitaka has such a great taste, one cannot help but have high expectations for the taste of Jyushiyo.
