Impression
Aroma: Subdued ginjo aroma.
Compared to Kangiku 39, which has the same rice polishing ratio, it is not as dry and light, but it is quite refreshing.
I thought the taste was quite different depending on whether it was hi-ire or not...
When you put it in your mouth, it has a clean sweetness that is typical of Junmai Daiginjyo, and then it goes dry and goes away.
There is no bitterness because of the 39 polished rice.
Compared to other Junmai Daiginjos, the umami and sweetness are stronger...
You can feel the acidity, but the sweetness prevails.
After that, it's a bit dry.
After swallowing, the lingering taste on the back of the tongue and in the throat is rather long.
