yoyoyoAt my usual liquor store, I found a bottle of Shimane Prefecture's Meishin and Gassan that I was curious about!
There were other sake that I was interested in, but I bought Gassan-san, which was the only bottle left!
The "innovation APPLE" is brewed with "malic acid hyperacidic sake yeast"! It is Tsukiyama-san's attempt.
The aroma was mild apple 🍎, not so loud and calm.
When you drink it, it is very apple! Amazing!
This refreshing, sweet and sour, low-alcoholic drink is cute and adult ✨.
The drink goes on and on and on.
It's amazing that it's made with only rice, rice malt, and water!

We finished the day with a super dry sake from Hyogo, our hometown 😋.

At the third restaurant, Asano Sake Shop, we compared three kinds of Takachiyos for the first time 😋.
I don't remember each one individually, but I'm sure they were all delicious... 😆.
Next time I'm going to drink at the first house on a day when I don't drink too much 😅. yoyoyoIt is a Nara sake, Shinomine, brewed with "Kame-no-o", which I don't know of any other brewery using except Senkou!
And it's from Nara Prefecture.
I was surprised to learn that Kame-no-o is not a rice suitable for sake brewing! I was so surprised!
The aroma is mildly muscat-like.
The mouthfeel is pleasantly gaseous. In contrast to the moderate sweetness, the light acidity and clear, crisp bitterness are very appealing!
The crispness is not harsh and disappears quickly.
It has a very refreshing taste and is delicious!
It has a pleasant taste with a sense of balance that is different from Kameizumi's!

I've been wanting to try this brand for a while ✨.
And it's a limited edition sake brewed with Tosa Urara, Kochi Prefecture's preferred rice for sake brewing!
The familiar label also has a nice genteel feel to it.
After opening the bottle, the aroma is fruity and pineapple-like.
The sweet and sour taste spreads quickly in the mouth. It is also fresh.
The balance of sweetness and acidity is superb.
The juiciness spreads in the lightness and smoothness of a white wine.
What a gorgeous and luxurious taste!
The graceful cleanness of the wine as it goes down the throat. This also feels fleeting.
The story of gorgeousness and fragility repeats itself with every sip!

yoyoyoFinding and mastering famous sake known only to those in the know is one of the pleasures of sake.
This is "Sensai," another brand name of Okutamba, a famous sake brewed by Yamana Shuzo! It is a reissue of the original brand that was made until the end of the Edo period.
It is said to be brewed using the wooden vat brewing method of the time of its founding, the "nama-hashime" method, and the local Hyogo Prefecture-produced rice, koji, and water, all carefully brewed using the techniques established by the Tamba Toji!
The rice is 100% Aiyama from Hyogo Prefecture!
As someone who values stories, I can only be interested in this one!
The aroma is fruity with a hint of lactic acidity hidden behind the fruity aroma.
When you drink it, you can feel the juiciness of Aizan and the characteristic tangy gasiness. It rounds out as the temperature rises a bit. The acidity and the slight bitterness that lingers at the end make the aftertaste tight and sharp ✨.
