My favorite Wind Forest ✨. This is my first time drinking Yamada Nishiki. Mild fruity aroma. Not too assertive but you can sense its presence. Taste. The tangy gasiness is typical of Kaze no Mori! Although there are no distinctive points, the sweetness, acidity, umami of rice, and moderate bitterness are in good total balance! I felt it had a very high level of perfection ✨ Easy to drink as expected ✨ It also blows away the fatigue of the day. This is why I can't stop drinking Kaze no Mori!

What a first meeting with Takachiyosan. I couldn't help but buy it when the clerk recommended it as a new sake 🤣. Citrusy sweet and sour aroma. What a juicy aroma! Another sweet juicy ✨ on the palate. Pitchy, acidic, and above all, sweet and sour grapefruit sensation, it's the best ✨. The aftertaste is also very pleasant with just the right amount of sweetness and umami! Freshness from start to finish ✨ It's light despite its alcohol content of 16, and it's insanely good! This is a super dangerous drink that you can keep drinking forever! Wish I had bought it sooner!

Maa- Japanese Sake Go-Around Kobe 13 11th stop "Asano Sake Shop" for the final sake of the go-around 😁. Why this sake? I don't even remember what kind of sake it was... Memorandum😅 We drank a lot and ate a lot in total of 14 restaurants starting from beer at 8:30am to ramen at the end 🤪. The third one is "Hokkai Ramen" 🍜, a nostalgic dish that used to exist on Awaji Island in the past.

Sake Go-Around Kobe 12 Closing the go-around at the 11th sake store "Asano Sake Shop", Kamishin Sake Brewery where I had drunk "Winter Moon" before 😁 I almost don't remember, but I think this sake was very sweet, but it was delicious 😋... Memorandum😅

Suddenly I realized that I haven't had any local sake lately, so I got my favorite Senzuke's Akigari. It's a dry, single-batch, single-hot sake, brewed with Hyogo Yamadanishiki for the koji rice and Hyogo Nishiki for the kake rice✨. Oh, the slightly fruity aroma! A little tangy and gassy! It is crisp, clean, and dry! Aromatic flavor, but not harsh, with a nice sharpness. It is a sake that will make you feel refreshed ✨.

This is the second bottle of Eiheiji Hakuryu, which I fell in love with for its commitment to sake, its approach, and its taste! Sweet and fruity aroma. It has a sweet and fruity aroma, which gives a lovely impression right from the start. There is no indication of the rice variety, but in the mouth it is clear and transparent with a sweet fruitiness! There is almost no bitterness or other unpleasant tastes, and the moderate acidity is a perfect accent. It goes down the throat and is very refreshing. The alcohol content of 15.5 is also exquisite. It has a truly dignified appearance. Wow, it is too good. This is the kind of sake that I can enjoy with gusto. Hakuryu, you have hit my taste perfectly! He is a wonderful brewer!

Lastly, here is another hiyaoroshi that I have been curious about for a long time. I've seen it in department stores for years and have been curious about it. Polishing ratio 58%, sake degree -5.5, acidity 1.6, amino acidity 1.3 Akebono Okayama Hakuto Yeast Slightly sweet and ripe with umami. I thought it would be a bit sweeter, but the aftertaste is quite sweet. After drinking this after eme, it feels very thin😅. Asano-san left the store with this. Already drank 1 gou in total 🏃 to the Icoma tasting.

I've been curious about eme since it was sold at Yamaya. Unlike the singer Aimer, Kochira's spelling is eme. It says it's a go-around limited edition sake, but several stores in Yamaya carry it😅. Made with Muscat of Alexandria yeast Alcohol 13%, Sake level -30, Acidity 3.0 Polishing ratio 70% Akebono Low-alcohol unfiltered unpasteurized sake. Fine bubbles in the glass 🫧. It is juicy, sweet and astringent. It has a slightly greenish taste with a hint of muscat 🤔. The sweetest and most delicious of the Kamishin set 😋.

Next, I ordered the Jiameishin 3 Combo, which included the one I've been eyeing for a while. First up was the Be-lue. Alcohol 15%, Sake degree -2, Acidity 1.4 Polishing ratio 58% Akebono It is quite clear and light, but you can feel the sense of rice. A little too light and not enough 🤔. I had never seen it before, but when I went to Yamaya on my way home, it was on sale!

I went to the Katano Sakura Fair at Asano Sake Shop because I was curious about it! The third item was Theory 02, which I was also interested in! Alcohol 14%, Rice polishing ratio: Sake mother 48%/unrefined 63 Sake degree -19.6, Acidity 2.2, Amino acidity 1.6 Sake mother Yamadanishiki, unrefined Japanese rice, Association #6 This is a sake made from noble sake. I went to the Katano Cherry Blossom Fair at Asano Sake Shop because I was curious about the fair! The first sake I was looking for was the limited edition light nigori sake! Alcohol 15%, Polishing ratio: Koji rice 50%, Kake rice 55 Sake degree +1, Acidity 1.5, Amino acidity 1.3 Gohyakumangoku 1801 yeast Gorgeous, fruity, sweet and delicious, but a little dry. Slightly effervescent and would be delicious drunk at home.

The first one I drank was the dewy scent. Alcohol 15 degrees, Polishing ratio: Koji rice 50%, Kake rice 55 Sake degree +2, Acidity 1.5, Amino acidity 1.4 Gohyakumangoku Association No. 9/1801 yeast I've seen it before but never had it. Slightly sweet and spicy impression. To be honest, I think it's the type that doesn't leave much of an impression 🤔.

The Eiheiji Hakuryu Fair in Fukui Prefecture was held at Asano Sake Shop. To be honest, I had never heard of this brand, so I googled it. Recently, I have seen some breweries making sake with their own rice, but Eiheiji Hakuryu has been doing it for 30 years! They put a lot of effort into it, starting from the soil preparation of the rice paddies. They have been working on this project for 30 years! They have been putting a lot of effort into it, starting from the soil cultivation in the rice paddies. This time, we obtained a bottle of "Rice Tekiteki! What a commitment.... This story alone must be delicious. And then, the bottle was opened. Fruity and gorgeous aroma. It is like muscat or lychee. But the aroma is not too strong, and it is pleasant and heartwarming. Now, let's enjoy it! The fruity taste comes with a faint gassy sensation. The introduction is similar to Omine-san's 3-grain Yamadanishiki, but without the bitterness and stimulation that we felt in Omine-san's case, and it is really clear. The umami of the rice and moderate acidity. What a delicious sake 😭 I'll have to try the mizuitekiteki and dohitekiteki next time I find them.
