This is the second bottle of Eiheiji Hakuryu, which I fell in love with for its commitment to sake, its approach, and its taste! Sweet and fruity aroma. It has a sweet and fruity aroma, which gives a lovely impression right from the start. There is no indication of the rice variety, but in the mouth it is clear and transparent with a sweet fruitiness! There is almost no bitterness or other unpleasant tastes, and the moderate acidity is a perfect accent. It goes down the throat and is very refreshing. The alcohol content of 15.5 is also exquisite. It has a truly dignified appearance. Wow, it is too good. This is the kind of sake that I can enjoy with gusto. Hakuryu, you have hit my taste perfectly! He is a wonderful brewer!

Polishing ratio 58%, sake degree -5.5, acidity 1.6, amino acidity 1.3 Akebono Okayama Hakuto Yeast Slightly sweet and ripe with umami. I thought it would be a bit sweeter, but the aftertaste is quite sweet. After drinking this after eme, it feels very thin😅. Asano-san left the store with this. Already drank 1 gou in total 🏃 to the Icoma tasting.

I've been curious about eme since it was sold at Yamaya. Unlike the singer Aimer, Kochira's spelling is eme. It says it's a go-around limited edition sake, but several stores in Yamaya carry it😅. Made with Muscat of Alexandria yeast Alcohol 13%, Sake level -30, Acidity 3.0 Polishing ratio 70% Akebono Low-alcohol unfiltered unpasteurized sake. Fine bubbles in the glass 🫧. It is juicy, sweet and astringent. It has a slightly greenish taste with a hint of muscat 🤔. The sweetest and most delicious of the Kamishin set 😋.

I went to the Katano Sakura Fair at Asano Sake Shop because I was curious about it! The third item was Theory 02, which I was also interested in! Alcohol 14%, Rice polishing ratio: Sake mother 48%/unrefined 63 Sake degree -19.6, Acidity 2.2, Amino acidity 1.6 Sake mother Yamadanishiki, unrefined Japanese rice, Association #6 This is a sake made from noble sake. It is very rich. But it is not too sweet and not clingy, so it is easy to drink. It is similar to the impression I had when I drank Tenmei's Kijoshu. I think Tenmei was sweeter 🤔.

I went to the Katano Cherry Blossom Fair at Asano Sake Shop because I was curious about the fair! The first sake I was looking for was the limited edition light nigori sake! Alcohol 15%, Polishing ratio: Koji rice 50%, Kake rice 55 Sake degree +1, Acidity 1.5, Amino acidity 1.3 Gohyakumangoku 1801 yeast Gorgeous, fruity, sweet and delicious, but a little dry. Slightly effervescent and would be delicious drunk at home.

The first one I drank was the dewy scent. Alcohol 15 degrees, Polishing ratio: Koji rice 50%, Kake rice 55 Sake degree +2, Acidity 1.5, Amino acidity 1.4 Gohyakumangoku Association No. 9/1801 yeast I've seen it before but never had it. Slightly sweet and spicy impression. To be honest, I think it's the type that doesn't leave much of an impression 🤔.

The Eiheiji Hakuryu Fair in Fukui Prefecture was held at Asano Sake Shop. To be honest, I had never heard of this brand, so I googled it. Recently, I have seen some breweries making sake with their own rice, but Eiheiji Hakuryu has been doing it for 30 years! They put a lot of effort into it, starting from the soil preparation of the rice paddies. They have been working on this project for 30 years! They have been putting a lot of effort into it, starting from the soil cultivation in the rice paddies. This time, we obtained a bottle of "Rice Tekiteki! What a commitment.... This story alone must be delicious. And then, the bottle was opened. Fruity and gorgeous aroma. It is like muscat or lychee. But the aroma is not too strong, and it is pleasant and heartwarming. Now, let's enjoy it! The fruity taste comes with a faint gassy sensation. The introduction is similar to Omine-san's 3-grain Yamadanishiki, but without the bitterness and stimulation that we felt in Omine-san's case, and it is really clear. The umami of the rice and moderate acidity. What a delicious sake 😭 I'll have to try the mizuitekiteki and dohitekiteki next time I find them.

This brand impressed me at the end of May this year. It was an unfiltered, raw, undiluted summer sake. This time, I will have a dry one. Ooooooooo! The aroma is vinegar-like. It smells like vinegar. When you drink it, the atmosphere reminds you of that excitement. The summer sake was thick, but this one is super light. It is light and fruity. It is delicious! Mr. Okada, the brewer, was at the store. I immediately asked him for his autograph! He was very shy and said, "This is the first time for me to write something like this. I am so happy! This is "Judo" from Nadagiku Sake Brewery. The brewer, Mr. Kawaishi, visited the store on this day! I went to get his autograph! As usual, I get very nervous when I ask for his autograph... He was willing to write it for me! Thank you very much! This sake was introduced in a video called "Nada Kiku Channel". I was very curious about it. I heard that the younger brother of the founder of Nadagiku Sake Brewery is Mr. Kawaishi Shuzonosuke (川石酒造之助), who is known as the "Father of French Judo". That is amazing! This sake is brewed as an export-only product. That is rare! 840 yen for 45ml. I'll have a sip since I'm here! It has a very gorgeous aroma. It has a sweet touch, but it is very well balanced. It is very delicious! The aftertaste is also nice. I am sure that everyone in France will also enjoy this wine! I am sure everyone in France would agree.
