Refreshing citrus aroma. The sweetness spreads in the mouth with a slightly effervescent taste. The 39% polished rice ratio means that there is no cloying taste. While the sweetness is strong, there is also a strong alcohol taste, which is a direct taste unique to nama-shu. The sweetness is also slightly citrusy. The aftertaste is a mixture of sweetness and bitterness rather than a clean aftertaste. It was a good sake with a little sourness and a juicy sweetness from it 🍶.

__________ Kijoshu Rice polishing ratio 60 Alcohol 13%. Sake degree: Undisclosed Personal evaluation: ★★★★★ Impressions This is my second kijo sake after Shinmasa Yonotori. Refreshing aroma with a hint of rummy. I could feel the sweetness from the aroma. It's so good... The moment I put it in my mouth, I knew it had surpassed the Yonotori lol! The taste is juicy sweet with a hint of apple. The mouthfeel is slightly mellow, probably because it is a kijo sake. Slightly acidic on the back of the tongue, but with a refreshing aftertaste. It was the kind of sake that made me want to guzzle it down! If I see it again, I will definitely buy it.

__________ Junmai Daiginjo Polishing ratio 50%. Alcohol 16%. Sake Degree -0.2 Personal Rating: ★★★☆☆☆☆ Impressions First of all, cold sake. Aroma of black vinegar! When you put it in your mouth, you can feel the black vinegar flavor just like the aroma. After that, sweetness and umami spread. The mouthfeel is as light and refreshing as water. The aftertaste is slightly sour, but the alcohol refreshes the palate. When it reaches room temperature, the umami and richness become more pronounced.

__________ Daiginjo Rice polishing ratio 50%. Alcohol 17 Sake Degree +4 Personal Rating: ★★★☆☆☆☆ Impression The dry taste has a firm umami flavor! Freshness due to the sake being unpasteurized. Slight brown sugar flavor in the aftertaste. It was not as sweet and refreshing as a Junmai Daiginjo, but you can still taste the sake's deliciousness and richness! However, if I keep drinking it, I'm sure I'll be crushed in no time.

__________ Kijoshu Rice polishing ratio: Koji: 60%, Kake: 60 Alcohol: 13%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions First Shinmasa, first Kijo sake! I can't believe I got to drink this sake...! I drank it with a lot of excitement. Yum 😭 Refreshing sweetness like ramune spreads Pale slightly carbonated taste... followed by a weak acidity and a slight bitterness... The aftertaste on the palate is good too! Slightly thick on the tongue. I wonder if this is kijo sake... This is a different genre of sake from the ones I've had in the past. I guess you could say it's a sake to be enjoyed by itself rather than to be paired with food... It was so easy to drink that I would drink it again and again if I had the money! However, I don't think I would have given it 5 stars if I had expected too much... I'd like to try it when it's in better condition and I'd like to try another series of Shinsei 😭. I'd like to try another series of Shinsei 😭 I'm sure my impression will change once I drink the freshly opened one...

Sake degree: Undisclosed Personal Rating: ★★★☆☆☆☆ Impression As soon as I put it in my mouth, I felt the sweetness spreading, but then the sourness overtook it. After that, I felt a little bitterness and sake-like umami. The aftertaste is rather peculiar and the bitterness remains a lot. It is very smooth on the palate. I thought it would be delicious paired with tempura or something fatty but not too rich in flavor 🍶. I would like to be able to describe in detail what kind of fruit I felt when I write this kind of comment, but I don't know how to practice... So far I can only taste melon and muscat flavors on my tongue... lol I want to be able to feel apples...

It has a nice carbonation and a pleasant texture on the tongue. However, the acidity was rather strong... After the sweetness, the tangy sourness seems to wipe it out. The aftertaste is slightly sweet. I guess I personally don't like sake with strong acidity... I wonder if the acidity would be reduced if the rice flavor was stronger...

Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions Ko no Tsukasa" from Shibata Sake Brewery located in Koda Town, Aichi Prefecture. I found out that this Yumesansui is made from sake rice grown in a production area located 20 minutes by car from the brewery (sake is a great way to experience the local flavor). I was curious about this sake because I found it at a liquor store near my house... I was surprised when I drank it! It's so good! The color is slightly yellow. I detected a discreet fruit aroma. The moment it enters the mouth, a refreshing, unctuous fruitiness spreads! While the fruitiness remained, there was no peculiarity, probably due to the low alcohol content, and the sake's rice-like umami was also clearly felt. I tried it with a variety of other sake, but it was not at all inferior to the Jyushiyo. I personally felt it was even better than Jyushiyo... I know it's presumptuous of me to compare them, but...

Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions Miyazumi Meizumi brewery, also famous for 寫樂 The rice used is Yamadaho, a rare variety of sake rice known as the mother of Yamada-Nishiki. The aroma is gentle. The aroma is gentle, with a hint of fruit... (but I don't know what kind of fruit it is...) When you put it in your mouth, a gentle sweetness and fruity freshness spreads. Soon after, a mellow and rich flavor comes in, followed by a sharp acidity that disappears at the end. The aftertaste is also refreshing. This is the kind of sake that is full of flavor... It was a delicious sake that was worth drinking 🍶.

The first sip is very sharp and fresh! There is a slight sourness, but it quickly disappears. There is not much alcohol in the mouth. However, I feel a warmth in my chest, and that's where I feel the alcohol. Overall, the taste was well balanced. I compared it with another Junmai Daiginjo-shu, but I felt a strong sweetness. Anyway, it was great... No wonder it has a good reputation! But I thought the Miyakanbai Nakadori was also a pretty good match. I'll have to drink some other Jyushidai to compare the tastes...

Sake degree: Undisclosed 720ml 3,240 yen Personal evaluation: ★★★★ Impression I was lucky enough to purchase this at a liquor store I happened to visit: ✌️ Opened the bottle as it was Christmas Eve! The aroma is slightly fruity. The color and bubbles look like champagne, and when you put it in your mouth, the fine bubbles hit your tongue pleasantly... After that comes a moderate alcohol taste of 13%, but soon a refreshing pineapple flavor spreads... Thanks to the strong carbonation and alcohol, the aftertaste is refreshing. It seems to go well with both strong flavored and light flavored food. I paired it with teriyaki chicken, which is often served at Christmas, and the sweetness of the sake became noticeable and quite delicious! The sweetness of the sake was noticeable and it turned out to be quite delicious! (After that, I tried it with something with demi-glace sauce, but it didn't go well with that... lol) Addition 3 days after opening the bottle... The carbonation that hits the tip of the tongue remains the same, but the flavor has become ridiculously mellow! First of all, the aroma is amazing! Even though it's a cold sake, the pineapple aroma is all over the place! When you put it in your mouth, you can even taste it! Great sake!

Junmai Ginjo-shu Rice polishing ratio 55 Alcohol: 16%. Sake degree: Undisclosed Personal Rating: ★★★☆☆☆☆ Impression This sake is a collaboration between Ni-Hare and the Chunichi Dragons! It's a collaboration, but it tastes great! The aroma is light when you open the bottle. The mouthfeel is soft with a fresh apple flavor. The alcohol taste comes after that, but on the contrary, it refreshes the palate and the aftertaste is refreshing. It was a delicious sake 🍶.

Junmai Ginjo-shu Rice polishing ratio 60 Alcohol 14%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions I heard that Brewing Forest changed its name in October 2024. Very easy to drink! The sweet flavor spreads and juiciness is what they call it! The mouth is filled with a fruity flavor. It has a cloudy, slightly carbonated taste, and feels like a very high quality tin sound. The sweetness becomes more pronounced as it gets tepid, but it doesn't get too heavy, and the aftertaste is still refreshing... It was a really good sake.

Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions This Yamano Kami is said to be made with yeast from the flowers of the sasa lilies found in the sacred grounds of the Ogami Shrine at the foot of Miwasan. The water, rice and yeast are all from Nara! The owner recommended it to me as a taste of Nara. Slightly refreshing aroma! When you put it in your mouth, the alcohol taste goes away and you think it's dry, but soon the fruity taste spreads! The fruity taste lingers in the aftertaste, but it is not harsh or unpleasant.

Fresh sweetness fills the mouth immediately with a slight sourness. The aftertaste is slightly spicy and refreshing. Seems to go well as a food sake. When I drank it with Nameko, the flavors enhanced each other and it was great!

I've been waiting for the right moment to drink it for a long time and recently I finally opened the bottle. Dry at first, sweet in the middle, with a clean aftertaste. I love the bitterness that lingers in the right amount. The freshness of the sake, as if it were still fresh, even though it is fire-aged, is as expected of Saku!

Sake degree: Unknown Personal evaluation: ★★★★★ Impressions At an izakaya in Nara Prefecture (I forgot to take a picture) It was so delicious that it made me think that all the doburoku I have ever had were fake! It may be doburoku, but my personal recommendation is the best ever! The fresh aroma is irresistible! The graininess of the rice remains, and it has a creamy mouthfeel like doburoku, but thanks to the fizziness, it is refreshing and has no unpleasant aftertaste at all! I used to dislike doburoku, but if it's this good, I'll want it every time... Imanishi Shuzo brews the sacred sake of the Ogami Shrine, and this nigorosugi muddy sake is a reproduction of that sacred sake. That is why it is said to be real muddy sake. I am happy to drink such a great sake!

Sake degree: Unknown Personal Rating: ★★★☆☆☆☆ Impression At an Izakaya in Nara Prefecture (forgot to take a picture) It has a stronger melon taste than Yamadanishiki. I was told that it also has a strong acidity and bitterness, but I think it was all hidden by the melon flavor. This sake also has a slightly carbonated taste and is easy to drink. The Kaze no Mori series may be recommended for sake beginners, as it has a completely different flavor from the sake available at mass retailers.
