I tried the new, limited edition "Initial R SPEC II" from Tsuchida Shuzo. When Tsuchida Shuzo made the sake, they chose to use IDO yeast from among the yeast that were brought into the brewery. Initial R" sold out last year, and this year's sake is being sold again in limited quantities as "SPEC II".
It has a banana-like aroma.
It is soft on the palate and gently enters the mouth. It has a strong flavor with a slight acidity and a bitterness in the aftertaste. As the brewer said, it still has some hardness, and you can enjoy the changes after opening the bottle. As the brewer says it is recommended to be served at room temperature or warmed up, I think it is even tastier when warmed up. Personally, I enjoyed it better chilled than at room temperature.
I thought it was a very quiet sake for an unconventional sake from Tsuchida. I guess if you drink it normally, it would be a very aggressive drink. I'm completely numb to it.
