I drank the Collage's Junmai Ginjo, Akaiwa Omachi. This may be the first time I've tasted the Omachi in the Collage. When I bought it at the liquor store, there were two types, Bizen Omachi and Akaban Omachi, but I chose the Akaban Omachi. I was curious to see how much of a difference there was between the two types, but as expected, I couldn't afford to buy both. LOL!
The aroma of this perennial Junmai-shu has a cemedyne aroma similar to that of a Junmai-Ginjo. The flavor is like the flavor of rice that is both tasty and sharp. The use of Omachi rice gives it a sense of volume, but it has a flavor that is typical of the Collagen. I realized that the way the brewery is built is more important than the difference in rice. However, after three days of opening the bottle, the sharpness I felt on the first day wore off and the flavor changed to fluffy and plump, and I felt the third day had more of the Omachi flavor.
It was delicious, of course, but I personally like the classic Collage. I thought it would go well with the dry taste of Gohyakumangoku.
