I drank "S.tokyo" from Matsumidori. The unusual name "S.tokyo" comes from the legendary Saccharomyces tokyo NAKAZAWA, a yeast discovered in 1909, which was used to make this sake. This yeast is the second oldest existing sake yeast and has never been used to make sake. I'm excited just to hear this story! The stylish design of the bottle builds anticipation. The scent has a refreshing citrusy scent. The sweetness is on full display from the first sip. In addition to the sweetness, there is also a tartness that tastes like a white wine. In addition, it has a creamy or rich taste, which may be derived from lactic acid, so you can feel the volume of the drink, which is surprising. It's easy to drink, but it's also hearty, so you can't drink too much. It is easy to drink but not too much. This sake appears to have been designed for the Tokyo Olympics. Unfortunately, the Tokyo Olympics will not be held in 2020, but I hope they continue to make S.tokyo.
